Notes: Lotus
otus™ is the latest experimental hop variety developed under the Hopsteiner breeding program to now be available to homebrewers. This tenacious hop outperformed thousands of brothers and sisters born of the initial cross breeding and survived a decade long journey to become the hottest addition to Hopsteiner's unique portfolio of exciting new hop varieties. Lotus™ displays exceptional aromatic characteristics, boasting waves of orange and vanilla followed by notes of candied grape and tropical fruit aromas.
Lotus’s genetic origin stems from Eastern Gold, a Japanese hop variety dating back to the 1930s, followed by a mix of Apollo, Cascade, and a USDA male. The USDA male was bred from an open pollinated seedling of a wild American hop developed at Wye College, England. The cross from the USDA male with Neomexicanus heritage adds an additional layer of complexity and uniqueness to this variety.

Sabro
For many years Sabro™ brand HBC 438 has been unofficially referred to as Ron Mexico due to its native US neomexicanus hop heritage, and was once one of the more difficult hops to get your hands on. It developed such a huge cult following in the brewing community that you can trace the recent boom in available neomexicanus hop varieties back to HBC 438. Sabro is notable for its complexity of fruity and citrus flavors. It imparts distinct tangerine, coconut, tropical fruit, and stone fruit aromas, with hints of cedar, mint, and cream. Sabro’s pedigree is the result of a unique cross pollination of a female neomexicanus hop. With a robust brewing performance, Sabro proves to be a strongly expressive hop that translates its flavor incredibly well into beer.
Vinnie of Russian River Brewing once used this hop in an experimental beer brewed for the National Homebrewers Conference, which was an absolute hit. We recently toured Russian River's new Windsor brewery with Vinnie, and he still raves about this hop and will happily talk about the origin of the Ron Mexico alias with a Cheshire grin on his face. We think you'll absolutely love this hop for brewing juicy, tropical pale ales and IPAs!

Notes: This is a quick beer to make and a quick one to go down. I will brew this when I am brewing another batch the same day,, as the grains for my other recipe steep, I will throw this 20 minute boil recipe on.. it takes a bit more of coordination, but I get two 5 gallon batches done in about the same time... it ferments quick, I salvage the yeast ($)
I strongly recommend the Gelatin for clarification, after the fermentation is done put the gelatin in the carboy and have it sit for 2-3 days, if may not clarify up immediately, but once you get it cold, it is crystal clear
Very easy drinking, great for summer.
Switch the hops around to Tennanger and Perle if you want a more German feel |

Notes: Prepare a same day pint yeast started w/ 4+ Tblspoons of wort and start brewing Crystal malt in 170 deg water - hold 10 minutes, sparge w/ 170 deg water. Bring LME; sparged run off + hops _ 2 tsp fresh crushed (rolling pin) coriander seeds to a boil - 50 minutes Last 10 minutes add I Moss and 1 capsule of servomyeces. Add 2 tsp of crushed coriander seed + 2 tsp of fresh grated nutmeg to primary.
Honey - Added "honey' was near honey stage (uncapped nectar from frames) pulled from our hives - slightly lower sugar level than capped honey. Using it for brewing. Added it after flame out when wort is cooled to 100 degrees. (Preserve aromatics). Take SG reading (refractometer read 1.087 SG for this, likely bc of the use of the uncapped frame nectar/ near homey.). I should still get a 9 or so ABV. I will add 1.0oz of citra hops (or similar hop) after it goes into secondary as a dry hop.
I will prime w/ 3/4 cup corn sugar heated in 3/4 cup of water - added to bottling bucket - rack into bottling bucket just before bottling |
