Fly sparge until 7.0 in boil kettle.
Boil, add warrior, 20 minute hop stand with 6 oz hops and 3oz Chai
Lactose @ 10 minutes
Rack to fermenter.
Pitch Yeast
When krausen begins to fall add dry hops.
Dry Hop 3 days
Transfer to Secondary for 1 week.
Split Vanilla beans and add everything to Secondary with 2oz Chai Tea.
Cold Crash 2 days.

Notes: This is Russian River's Pliny the Elder recipe posted by Vinnie Cilurzo.
Mash grains at 151-152° F (66-67° C) for an hour or until starch conversion is complete.
Mash out at 170° F (77° C) and sparge. Collect 8 gallons (30 L) of runoff, stir in dextrose, and bring to a boil. Add hops as indicated in the recipe. After a 90 minute boil, chill wort to 67° F (19° C) and transfer to fermenter. Pitch two packages of yeast or a yeast starter and aerate well. Ferment at 67° F (19° C) until fermentation activity subsides, then rack
to secondary. Add first set of dry hops on top of the racked beer and age 7-9 days, then add the second set. Age five more days. |

- Mash w/ 4 gal, strike at 166, w/ 1tsp Epsom Salt & 1tsp Calcium Chloride
- collect 2.5 gal
- batch sparge w/ 2gal at 201F to bring mash to 170F
- collect 2 gal for 4.5 gal total
- boil 60 mins to 3.5 gal
- add orange peel 15 min before flame out
- add crushed coriander 5 min before flame out
- add 1.5 gal for 5 gal total

- efficiency way lower than expected at 50% (most likely due to oats and wheat absorbing too much)
- only collected 2 gal on first running and 1.75 gal on batch sparge, so added .75 gal up to 4.5 gal before boil
- down to 4 gal before starting boil, yielding 3.25 gallons
- added to 1.5 gallons in primary for 4.75 gallons total |

I would add a higher IBU next time. An IBU of 30 or a littler higher?
I was thinking an OG of 1.088 was not going to ferment...But is did!
It ended at a 1.022 which was perfect. any more lower and it would been too would have too much emaphasis on the AC. It proves to have a kick but a great nose too. The silkyness came through due to the oats<----that was the greatest part! the blackness under a brown blanket of foam ... it was just perfect!

Notes: Once wort is up to a boil, add the first 3 lbs. of DME. Once a boil rolls, start hop schedule. With 20 minutes remaining in the boil, add the last 3 lbs. of DME. Flameout at 60. Chill rapidly to 70, transfer to fermenter, top up to 5 gallons, take gravity reading, top up to 5.5 gallons, pitch yeast, and ferment for 7 days. Transfer to secondary onto dry hops and ferment additional 14+ days.
Add Gelatin (optional) 3 days prior to bottling and cold crash in fridge to clarify beer.
Prime and bottle. Condition 21 days at 70-72 degrees. Chill 3 days..enjoy!

You can also do this as a true common/steam beer and pitch a lager yeast (I've used saflager) at room temps, much how California Commons like Anchor Steam are brewed. Dec 2014 update I'm going to suggest that everyone at some point try this as a steam beer...Lager yeast at room temp without lagering. I just kegged it, and even uncarbed it has an amazing flavor... steam beers, have an "off" flavor that is not as clean as a properly brewed lager...taste anchor steam and you'll get it, especially if you compare it to Anchor Lager. There's definitely a funkiness about it... something unique... Try it with this beer. It my be the permanent way I brew this beer from now on... I'll keep you posted...and if it works out, I may change the official yeast to saflager for this beer. If you try it this way, as a steam beer...especially if you've brewed it with ale yeast before and can compare it, I would love you opinion.
