____________________________________________RMy review:
This beer is the shit. I am not sure if it is perle hops or the sweet love of the vienna or the victoy malt I love the most. It is so drinkable and very unique for a pale ale. I would make this 100 more times because it is that good. |

| Notes: This beer was made, then pitched on top of a yeast cake from an Abbey Ale I racked into secondary. It's a traditional Belgian ale that is really balanced and drinkable. It got it's name from the 1 percent addition of Special B Malt that imparted a complex dimension to the beer, a subtle raisin-plum flavor that compliments the WlP 500 fruit esters. |

Notes: Yes, this is built for a non-alcoholic beer. Aim for a good alcoholic beer to get a goon N/A beer. It is easiest to keg. Carbonating in bottle is difficult.
Ferment normally and keep on the primary yeast cake as long as you would like. Rack into boil pot and bring temp up to 182-187F and hold temp. Small bubbles will appear and a foam will develop on the surface of the beer. This is the alcohol burning off. When foam is gone cool and rack to secondary (I rack to keg) Dry hop for two weeks minimum. Carbonate normally.
If you want a good beer with alcohol then ignore the previous and ferment normally. rack to secondary and dry hop for 14 days. Carbonate and enjoy.

Notes: Bn podcast.
Adapted, by using non-belgian yeast etc.
100% wheat or 50/50 wheat/pilsner.
Fermentation temp and O2 are crutical.
Start with 2lb fruit per gallon and adjust up by taste.
Ideally wild yeast and aged in barrels.
For wild yeast, leave open to air while cooling. If done after "2 nights of frost" there will be a better ratio of wild yeast to bacteria in air. |

Notes: Not true to style. Using American APA-style hops. 21L into fermenter. Diacytel rest and dry hopped w/ 30g citra for one week before bottling. Followed by lagering for 12 wks.
Additional notes: Skipped adding extra yeast and racking. Rather, went straight into bottle after three weeks. Citra dry hop gave a slight cat pee funk. Otherwise, highly drinkable - good malt sweet/bitter balance, good carbonation and clear enough to read the newspaper through it. Crisp and clean. Will definitely brew again but without the citra dry hop! |
