Notes:
Strike with 9 gallons at 160 to hit 145. Raise through Herms to 155 after 45 minutes. Verify Mash PH is 5.2. Adjust if necessary with lactic acid. Sparge with 11 gallons at 165-170
Safeale 04 (wyeast 007) fermented out three generations in. Yeast has a good clean ale flavor. Made a 2 liter starter two days before brew day 1-21-12.
Pitch yeast at 65. Add 1vl for 2min of pure 02 prior to pitching. Ferment at 65. Raise to 70 degrees after a few days to clear diactyle.
Add a Brett C culture in secondary after building it up via starter. Adds a nice leathery/citrus/pineapple complex flavor. Dry's the beer out substantially and really adds a huge amount of complexity. Drying the beer out helps substantially in the finish.

Notes: Special Brewing Instructions:
1. At start of boil, put dried lingonberries in the blender and cover with wort from the kettle. Puree, cool, and add the pectic enzyme. Refrigerate for one 1 day. Add this mix to the fermenter on day two of fermentation.
2. After 30 minutes of the boil, remove two cups of wort to a smaller pot. Heat the wort to keep it hot, but do not boil it. Add the yarrow, meadowsweet, and birch syrup. Steep this mix until the end of the boil, then strain it into to the kettle.
3. Add the cranberry concentrate and honey immediately after flame-out (end of boil).
Residue of this gruit was recovered from the grave of the Egtved Girl, and was reproduced as "Kvasir" by Dr. Pat McGovern and Dogfish Head Craft Brewery in 2013. This is what the Danes drank before they were Danes, over two thousand years before they were even Vikings, in a time before Christ or Odin, when they worshiped the sun. Brew it and think of her, a young woman with short blond hair and a braided skirt, who died in ca. 1370 BC.

Notes: NOW:
AROMA: English style earthy herbal notes from the late hop addition of the KG hop. There is some residual coffeelike, aroma, A light grainy-nutty oatmeal character but very mild.
TASTE: Some mild roasted coffee to coffee-and-cream flavor, light malty sweetness, very smooth bitter-ish character, soft mouthfeel, smooth, silky, velvety, medium body, creamy head with tight bubbles, .
Next Time:
Use 2oz of hops @ 60min. and then do a 15min addition to tone down the hop aroma to let some of the roasted malt character come through.
Add into secondary 5oz of THCO coca nibs and 5oz of fresh roasted coffee beans. |

| Notes: lactobacillus starter:before brewday make a 2 liter starter, cool to 120 F and place in a glass demijohn. add the unmilled malt's to this starter and hold temp as close to 120 as possible for 2-5 day's.test Ph daily until it reach's 3.5. don't let it go lower, brew your main mash on that day. after pulling the grain bag decant the lactobacillus starter into the wort and and let set in a carboy filled to the top. place airlock on and let sit for an additional 2-5 day's. when the Ph of the wort reaches 3.5 proceed with brewday.boil for 15 minutes, add hop's at start of boil. chill wort to pitching temp for yeast and ferment at optimum temp's for yeast. |
