Kill the flame, add the 0 min boil hops, then let sit covered for 60 min.
Drop the temp Pitch and Ferment at 70F for 14-17 days.
Cold Crash to 40F for 2 days before racking to secondary. Raise back to pitching temperature and dry hop. 3 day dry hop. Prime and let sit for 21 days at 70F.

Notes: Don't be skeered.
Beta gluc rest at 105F for 20-30 min. Sacch rest at 154F for 60 min. Add the 0 min hops, swirl and cover for 30 minutes. Drop the temp quickly, pitch at 68F, raise to 70F at peak of fermentation, and let sit in primary for a total of 14 days. Cold crash for 2 days to 40F, rack to secondary and then bring back to 70F for dry hopping. 3 day dry hop. Bottle and condition for 21 days at 70F. |

Good things come to those who wait. This smooth and roasty oatmeal milk stout won our 2015 Prototype Challenge at a canter. Roasty coffee and chocolate lead to a decadent, full-bodied richness of near uncharted depths with a velvet mouthfeel from the addition of oatmeal and a touch of wheat. This is complemented at every turn by the Magnum and Sorachi Ace hops, with the latter bringing an intensity of smooth vanilla and dark berry fruit on the long, rewarding finish. There's a lot of speciality malt in the mash. Make sure you take the run off nice and steady – increase the flow too much and pull in the bed at your peril.

Notes: This is the largest all grain mashing I have done to date. Almost 22 lbs of grain almost filled to capacity the mash tun. When the hot water was added I discovered pretty much the capacity of the cooler (22lbs) After 60 minutes and periodic checks to see the temperature stayed around 155, the concoction was drained, sparged, boiled for 60 minutes, adding hops and spices and lactose according to schedule. 6 gallon fermenting bucket was sanitized, filled and yeast was pitched around 6pm on 11/2/2014.
The grains were left in the mash tun for a small beer that followed approximately 15 minutes after the "Hazel's" wort was removed and sparged.
After 12 hours the bucket has not started to bubble. Moved bucket to kitchen counter.
Transferred to carboy after 1 week. Left for 10 additional days. Tranfered to the bottling bucket on the 19th and bottled 4 gallons of Aunt Hazel with final gravity at 1.023.

Notes: This brew is an iteration of a few ciders using different grain bills (juice to honey ratios) with various yeasts.
Notes:
5lbs = 5 Gal. Apple Juice (if this is your first cider, use organic juice without potassium sorbate; it will kill the yeast and not ferment). Don't think I used maltodextrin here.
The rest of the grain bill is accurate. If a little less kick is needed, try one of the alternates below. I'm using WLP001 this time because of its tolerance for high alcohol, higher fermenting temp and because it finishes sweater (personally I prefer the dryness of the EC-1118 but then it's closer to Cyser territory).
I'm thinking ABV should be close to 10%. Also, because OG will be relatively high I'm using a starter. One could also double pitch with decent results. I've pitched one yeast pack before and still not had any problems.
Basic steps: Boil 2 gal. apple juice and add honey stirring constantly. (Honey is heavy and will sink to the bottom. It burns easily like candi syrup.) Boil juice, honey and sugar together for at least 20 minutes. Combine wort with remaining juice once temps drop to pitching levels.

Notes: Not able to do a side-by-side tasting but from memory, although this is lower abv, it's very close on mouthfeel. This batch of hops (Mosaic and Citra 2016) are a bit more grapefruity and citrussy than tropical.
Very happy with how this turned out and the carapils seems to have stopped the body getting too thin without being too sweet.
Will tweak the hops next time (probably switch or add Amarillo and Galaxy) but some variation of this will be my house pale.
I think the most important improvement came from using my new pH meter and getting the mash pH (5.19) and sparge pH (4.8 - was scary low but seems to have worked) down. Finishing beer pH was ~4.4 when most of my latest have been 4.8-5.3.
