Notes: With 15 Minutes left in the boil, add 4.5 lbs DME and 1 lb Dextrose.
At flameout add 1 oz Centennial, 1 oz Galaxy, .5 oz Citra. Cover the Brew Kettle and perform a hop stand for 15-20 minutes, then discard hop bag and cool wort to 80 degrees.

Notes: Not able to do a side-by-side tasting but from memory, although this is lower abv, it's very close on mouthfeel. This batch of hops (Mosaic and Citra 2016) are a bit more grapefruity and citrussy than tropical.
Very happy with how this turned out and the carapils seems to have stopped the body getting too thin without being too sweet.
Will tweak the hops next time (probably switch or add Amarillo and Galaxy) but some variation of this will be my house pale.
I think the most important improvement came from using my new pH meter and getting the mash pH (5.19) and sparge pH (4.8 - was scary low but seems to have worked) down. Finishing beer pH was ~4.4 when most of my latest have been 4.8-5.3.

Misfire! (2014) is an American take on an English bitter. It has a more pronounced hop characteristic from late additions of Cascade and Saaz hops. As the beer warms in the glass, you will notice the flavors open up to a smooth maltiness and a more pronounced aroma.
Misfire! was born out of a mad scientist like obsession with making beer. I saw lonely malt and hops sitting on the shelf begging to be made into delicious beer. Using only left over supplies from earlier batches, I assembled a recipe, a delicious recipe, Misfire! |

Notes: Don't be skeered.
Beta gluc rest at 105F for 20-30 min. Sacch rest at 154F for 60 min. Add the 0 min hops, swirl and cover for 30 minutes. Drop the temp quickly, pitch at 68F, raise to 70F at peak of fermentation, and let sit in primary for a total of 14 days. Cold crash for 2 days to 40F, rack to secondary and then bring back to 70F for dry hopping. 3 day dry hop. Bottle and condition for 21 days at 70F. |

Notes: This is a test run using Knudsens organic pear juice. Very pricey at 6 dollars a quart/ making 0.75 gallon Measured SG = 1.058 (NO sugar was added- used sugar on grainbill because an option for pear juice is not there :) )
Yeast will be mangrove jack belgian
make starter with 1 cap of water and 1.2 oz of table sugar. I will use ~ 1/3 of the pack which should be way more than enough of a pitch. Aeration will be with vigourous shaking of half-filled 1 gallon jug.then top off. I wired on the rubber bung and airlock. seemed like it wants to pop off.
