Was our first non-kit attempt. Converted it to an extract brew and accidentally reversed the hop schedule (all at FO instead of at the beginning of the boil). But everyone liked it that way, so we kept it!
Mash Schedule:
Strike grains with 6.75 gal of water at 165 °F.
Mash at 152 °F for 60 min.
Vorlauf and lauter 4.25 gal in your first runnings.
Add 4.25 of sparge water at 168 °F.
Rest for 15 minutes.
Vorlauf and lauter 1.75 gal in your second runnings.
Your combined runnings should be 6 gal.
Hop stand after FO for 15 minutes. |

Made a 2 step starter of WLP001
Brought apple juice to build and mixed in honey, brown sugar, and turbinado.
Original Instructions
This brew is an iteration of a few ciders using different grain bills (juice to honey ratios) with various yeasts.
Notes:
5lbs = 5 Gal. Apple Juice (if this is your first cider, use organic juice without potassium sorbate; it will kill the yeast and not ferment). Don't think I used maltodextrin here.
The rest of the grain bill is accurate. If a little less kick is needed, try one of the alternates below. I'm using WLP001 this time because of its tolerance for high alcohol, higher fermenting temp and because it finishes sweater (personally I prefer the dryness of the EC-1118 but then it's closer to Cyser territory).
I'm thinking ABV should be close to 10%. Also, because OG will be relatively high I'm using a starter. One could also double pitch with decent results. I've pitched one yeast pack before and still not had any problems.
Basic steps: Boil 2 gal. apple juice and add honey stirring constantly. (Honey is heavy and will sink to the bottom. It burns easily like candi syrup.) Boil juice, honey and sugar together for at least 20 minutes. Combine wort with remaining juice once temps drop to pitching levels.

Notes: Brew day 5th Apr 23 water treated with AMS,
an attempt to brew a low alcohol beer. Google advice suggests high mash temp and short mash time , presumably to leave unfermentable sugars ? to add body? aimed for 72c and 40min
Bottled 10 Apr, taste is ok but obviously short on mouth feel.
I was looking to get an ABV of about 2% but ended at 1%
Bottle conditioned with table sugar aiming for 2.5 will update in a couple of weeks
03 June, it turned out drinkable which is a relief. Not a lot of flavour, a weak English bitter would be the best description but I think it has promise, will try again either a higher ABV 1.5-2% and or dry hop.
Other option is to add some lactose to give it body, |

Notes: Rehydrated yeast but pitched hot (90f or so) as I did not have time to cool the wort as the yeast was already hydrated.
Straight into a swamp cooler to try and bring the temps down.
Fermented for 2 weeks in the mid 60s.
Overcarbonated resulting in harsh bitterness but this gets better all the time. After 2.5 weeks in the keg this is delicious |

Valamin rajta vagyok, sokkal keserűbb a vártnál, de remek keserűnarancsos aromák.
