Mash at 156°F (69°C) for one hour, adjusting pH to 5.2 with citric acid if necessary. Mash out at 168°F (76°C). Fly sparge at 168-170°F (76-77°C). Don’t use Whirlfloc or Irish moss in the boil. Chill to 108°F (42°C) and add whirlpool hops, stirring or whirlpooling to keep hops in suspension for 60 minutes. Chill to 70°F (21°C) and pitch dry yeast blend; do not pitch more WB-06 and T-58 than specified, as they will dominate the clean base strain. There is no need to hydrate the dry yeast prior to pitching and no need to aerate or oxygenate the wort. After 24 hours, lower fermentation temperature gradually to 64°F (18°C) over a 60-hour period, let fermentation run at 64° F for 4-5 days depending on yeast activity, and then add the dry hops to primary and ferment to completion (usually about 2 days). Take care to minimize oxygen uptake at all times after fermentation. Cold crash to 32°F (0°C) for 2 days, then closed-transfer to a keg and force carbonate. |

Notes: Step by Step
Crack the grains. Treat 2 gal. (7.6 L) water with one teaspoon each of gypsum and calcium carbonate. Heat to 164 °F (73 °C). Add grains, gently mix in. Mash should settle at 152 °F (67 °C) or so. Hold for 60 min. Wash the grains with 2 gallons (7.6 L) hot water (~ 168 °F/76 °C) and top off the kettle to 6.5 gallons (24.6 L).
Turn off heat and add the treacle and dried malt extract, and stir until all everything is dissolved. Bring to a boil, total boil time is 90 min. Boil 30 min., then add both the Goldings and the Fuggle hops. Boil 60 min. more.
Remove from heat, chill, and add to primary fermenter with enough chilled pre-boiled water to make 5.25 gal (20 L). When cooled to 70 °F (21 °C), pitch yeast.
Ferment warm, ~68 °F (20 °C) for three or four days, then move to a cooler place, 60 °F (16 °C) for a week to 10 days. Rack to secondary if you so desire and age cool for three to four weeks more. Prime with brown sugar, bottle, and allow time for proper carbonation or keg and force carbonate.
This beer will be drinkable in one month but will be better in three. You may find (if it lasts) that a two-year-old bottle will be wonderful.
All-grain option:
Increase the pale malt to 11.5 lbs. (5.2 kg), mash with crystal, chocolate, and wheat in 4.25 gal. (16 L) of water; sparge with 5 gal (19 L). Collect 6.5 or 7 gal. (24.6 or 26.5 L) of wort, then boil long enough to reduce to 5.25 gallons (20 L) with hop schedule as above. |

Notes: Originally planned to use Mt Rainer hops at 5 and 0 minutes but substituted with German Hallertau. Adjusted hop quantities to hit 45 IBUs.
I might add cocoa nibs during secondary just to pump up the chocolate flavors. Recommendation is to use 3.6 oz of cocoa nibs for 3 gal up to 4.2 oz for 3.5 gal (1.2 oz per gallon).
The cold crashed sample has nice malty and hoppy flavors. The hops have imparted some nice spicy notes that will be great when the weather gets colder.
Prepared the spice tea as follows (note this is for packaging 2.6 gal):
1/4 tsp ground allspice
1/4 tsp ground nutmeg
5 each whole cloves
1/2 to 3/4 a stick of cinnamon
0.05 oz of tangerine zest
Mixed the above in 1 cup of beer with 2.8 oz of priming sugar (corn) and boiled for 4 minutes. Poured the tea into a French press and let it seep for 15 minutes before cooling to room temperature. Depressed the plunger on the French press and poured the tea into the beer. Bottled as always. Primed for 2.6 to 2.7 vol of CO2 (the beer was flat prior to bottling).
