Gladfield Chit Wheat Malt NOT Chit Malt
28/11/21 - Kettle soured with Yeast Bay Lacto blend, pre-acidified with 10ml of lactic before pitch. CO2 flushed and left for 2 days on a heat wrap. Finished at pH 3.75 pre-boil.
30/11/21 - SG: 1058 (Pre-boil)
10/11/21 - SG: 1013 (Tilt), crashed to 1.5 C, added 2kg of boysenberries.
13/11/21 - Dry hopped with coffee in a bag
14/11/21 - Kegged and carbed, bright red in colour, not much coffee flavour, heaps of berry.
15/12/21 - Added extra 100g of whole coffee beans to keg in muslin bag to boast coffee flavours against the big berry favour. |

Mash @ 155 (156 actual for me) for 60 minutes (single infusion...no sparge)
1teaspoon Fermax yeast nutrient @10 minutes left in boil
Pitched yeast 9-29 at 8:30pm....had full krausen 12 hours later next morning.
Steady krausen for four days @66 then ramp to 71
10/10/2017 took gravity. 1.016. Tastes delicious. No off flavors at all.
10/13/17. Gravity stable at 1.016. Kegged and carbonated....still hazy. Delicious. |

Notes: Mash grains for 30 minutes. While mashing bring 1 gallons of water to boil. Remove grain bag and place into a strainer. Drain grain "tea" through grains until it runs clear to remove any solids. Add clear grain "tea" to boiling water and bring to a boil. Add DME and return to a boil and follow hop schedule.
Cool to 72 degrees and add enough water to bring to 5 gallons. Aerate wort and pitch yeast. Ferment for 2 - 3 weeks at 69 degrees.
Bottle condition at room temperature for 2 weeks then refrigerate for 1 week. |
