Notes: 1 oz licorice root at 15 minutes. 1 chopped vanilla been primary.
2 oz bourbon soaked oak chips. Soak oak chips on brewing day to start. Ferment around 68 degrees and once the fermentation slows down add the candi syrup and the vanilla bean.
Primary 3 to 4 weeks then secondary , pour off bourbon from oak chips and add the chips to the secondary. Age for 7 months. |

Notes: 5/20/16 - mashed around 148 to 155 for 90min sparged with 2.7l of 175 degree. No yeast nutrient. Well first try so boil off was not as expected at 90 mins. 4 gals for .079OG the yeast want 70 to 75 for few days then drop it.
6/1/16 - FG .020 disappointing for 7.74% will put on oak and age anyway.
11/4/16 - OG after aging .012 for 8.79% tastes good too! |

To brew this Ruthless Rye clone, mash grains at 154°F (68°C) for one hour. Mash out at 162°F (72°C) for 10 minutes, then raise to 172°F (78°C) and commence sparge. Boil for 90 minutes. Use rice hulls if a rye-induced stuck sparge is a concern. Steep aroma hops for five minutes at knockout and proceed with wort chilling.
Ferment at 68°F (20°C) until finished, rack on to bagged, weighted dry hops and hold for three days. Remove dry hops. Crash cool and condition the beer for at least a week before packaging. |
