This recipe uses reverse osmosis (RO) water. Adjust all brewing water to a pH of 5.5 using phosphoric acid. Add 1⁄2 tsp. each of calcium sulfate and calcium chloride to the mash.
Chill the wort to 64 °F (18 °C), pitch the yeast, allowing temperature to rise to 68 °F (20 °C), and ferment until complete. Dry hop the beer for five days. Rack the beer, prime and bottle condition, or keg and force carbonate. |

| Notes: Steep 150-155 for 30 min, bring to boil. Add extracts and hops, adding nibs at 30 min, lactose and brown sugar at 15 min. Cool wort and pitch yeast, fermenting for two weeks. Rack on top of coconut and nibs for one week, or until desired flavor profile. Add small increments of almond extract at bottling, you want the almond to be present behind chocolate and coconut, not over powering. |

| Notes: Mash at 150deg for 90 mins in 4-3/4 gals h2o. Sparge as usual, adding .3oz s.c. hops as first wort hop. Boil for 90 mins, adding hops per schedule. Chill and pitch one pack rehydrated Safeale us-05. Ferment for one week and transfer to secondary for one week. Add dry hops per schedule and let go 2 more weeks, shaking bucket to rouse hops twice (3 days in and 10 days in). Keg as usual. |

Notes: Rest 3 lbs pale malt at 120f for 2 days to make a sour mash. On brew day, mash the remaining malt as normal. Add sour mash, heated to 150f, to the main mash in the last 10 minutes. Then mashout and continue brewing as usual.
Take note of the higher fermentation temperature, because this yeast will get stuck at lower temps.
