TLDR; next time try different yeast or higher fermentation temp; pull oak cubes and bottle once its tasting great. consider oak aging in keg and natural carbonation so you get the yeast in the bottle.
Scored 33 but no medal in MALT Turkeyshoot.
My opinion : This peaked before I bottled it. It was tasting so good at one point, it was kinda hazy too, smooth and complex. By time I bottled it it has become super clear, overly rum oakey and too sweet, cloying and boozy, syrupy almost. There was oak cubes in the keg which could have done it but otherwise the beer changed a lot over the course of the year.
From the judges : basically they wanted more belgian yeastey character, I could agree with that. Could maybe try a different yeast or ferment hotter, I think the safale belgian is kind on the clean side and maybe too flocculant. One judge said not enough oak and rum but the other said lots of it.

5 years later finally dusting this recipe off for production.
adjusting for efficiency. adding DME. using cane sugar instead of candi. adding more malt.
using warrior for bittering. adding some hallertau at end of boil because why not.
probably going to be using reused s-33 from a previous batch.
this batch likely going into a bourbon barrel. again, because why not. it will probably be darkened quite a bit since the barrel has had stout and barleywine in it previously.

initial recipe creation notes:
* choosing simple grain bill from NB's version because thats my style. they had belgian pale which i subbed for 2row but then changed my mind and went with a pilsner munich mix.
* changed from 2lb 180 to 2lb 90 to reduce the calculated color to within the bjcp range
* many recipes on aha were using magnum so i used the minimal of that to get into bjcp range
* using one full pack of rva hopefully dont have to make substitutions. some options are
** 1338 belgian strong ale
** 3787 trappist style high gravity (<-- used this for tripel play in 2019, possibly reuse for 2020 tripel andor dubbel)
** 1762 belgian abbey ii
* going to mash at 148 for 60. cb&b suggests 90 min mash at low temp. ill take the low temp but im pretty good at reaching low FG so ill stick with 60 mins
note that there appears to be some back and forth about the definition of quad and belgian dark strong ale . brewers association has them as two separate styles however bjcp does not have quad. it has been said that quad should be a subcategory of BDSA, and also that quad refers to certain specific BDSA beers such as westy 12. indeed the base recipe referenced below from northern brewer appears to be a westy 12 clone. also of note is that rochefort 8 is considered BDSA while rochefort 10 is considered a quad.

Adjusted recipe here and there. added debittered black malt for color and sugar / base malt adjustments for abv. i think aiming for 9 would be better than 10...
citra mosaic combo for now. might need a little bit of bittering hop to balance high maltiness? or will we get enough from the black malt?
BFC used hothead although nervous using it again here in a dark beer (several mona lisa batches came out weird but that was with unproved malt bill).
could go with standard us05 or london with big starter. or lutra for cleaner profile but since this is a fruity ipa hothead could work hoping it doesnt get stressed.

brew day was a pain in the ass. tried using biab bag but mash was still stuck on and off, pump on and off, temps all over the place. removed the bag but still stuck. i think the oats.
then the pump was again stuck on knockout, could not get it to work at all. had to siphon the wort out the top and strain with hand strainer smh.
but we got an OG of 1074 for 5.5 gallons - this recipe minus the oats shouldve been 1076 so this counts as pretty close to spot on. so updating the efficiency now from 65 to 58. to reflect this so next time wont have to do this wonky math.
original projected abv was 8.5 but we deliberately over estimated. updated recipe projected abv of 7.8 we were shooting for 8.0

did not take down FG. the beer tasted amazing but turned brown after about a week. mustve oxidized during kegging or carbonating (shook keg) but it really tasted great, a lot of tropical fruity flavor and smell. not sure what hops are in this blend. detected a small amount of galaxy in it.

Initial recipe creation,
grain bill : copying DRIP 3. boosting a little bit. changing eff to 60 i think we should be able to do that especially with cooked oatmeal. pay more attention to volumes. try not to end up with too much wort!
hops : will feature zamba. single hop. composing schedule based on blueberry yum yum. even split between 5 min, flameout, high krausen and standard dry hop (maybe keg)
yeast : prob would be better with london, but will consider kviek
water : thinking i will use tap. acid malt for pH. we have observed better results in west coast with water adjustments, maybe we try here too?

2/3/2021. Did not make it into feb. Its about 40 days since it was kegged, less than that since canned. The canned beer stoll looks nice and smells and tastes better than some commercial stuff but it's too bitter and lost a lot of spunk. For this next time I think we need to nail down the gravity, nail down the ph. Ditch the warrior and do like a full lb total hops and do like 1/3 hop bill in whirlpool. Try to limit oxidation in transfers but I dont think that is the main problem here. Consider doing some water adjustments. I wonder how the west coast ipa water profile would do for this.

12212020 updating recipe here to reflect what i did. please reference previous versions of this recipe for the original/correct recipe. realized i didnt have any real citra during brew day so i overloaded on mosaic and used a little citra noble. then in dry hop i did something off script as well cant remember what but i think i mightve done 4 oz citra and 2 oz mosaic?
efficiency was bad, target 1072 actual 1065. bad ph reading. not sure what happened but maybe some issue with water. need to examine water profile from tap and/or build a custom profile from scratch.

kegged this a couple days ago. really hot with hop burn. and kind of a rubber smell and taste. i wonder if i pushed this kveik too far. also i have not been cleaning it from trub and it could possibly have gelatin protein gunk it in? not sure. prob need to start again with a fresh pitch. anyway the first pint was pretty bad tasting and the second i drank last night was also but a little better. maybe hop burn will subside. its only about 10 or 11 days out from brew day. some ipas taste better after a couple weeks. maybe itll improve.

Notes: Fine crush recommended! Due to the heavy grain bill, recipe is for 2.75 gal so it can be made in a 10gal brew kettle using BIAB, and also have plenty of headspace in a 6.5 gal carboy for fermentation. Two 2.75 gal batches can be combined for a full 5.5 gal batch in a keg or secondary fermenter. Starting mash water should PH at 8 to achieve desired mash PH.
For Ghost Pepper Bourbon tincture, infuse 2oz of bourbon with 1 ghost pepper for 15 minutes, then remove pepper.
After primary fermentation, add adjuncts to secondary for 1 week before racking to keg or final vessel for another 1+ month of aging at 63 degrees.

Notes: For our barrel-aged version of Belgian Tripel, we selected a rye whiskey barrel (Bulleit Rye). We chose rye whiskey barrel for the typical spice character that comes with that style of spirit. The initial barrel time will be set for approximately 3 months, upon which time beer will be tasted and decision made to end or continue time in the barrel.
Our yeast strain was changed from a lower flucculating belgian tripel strain to a belgian ale strain that has a higher level of flocculation that will make it better upon transfer to barrel. The ale strain chosen still exhibits fruit character and rustic phenols desired in our tripel. Alcohol tolerance is also within our goal for the finished product.
We removed belgian candi sugar and added carapils to leave a higher finishing gravity to balance out the drying characteristics that will take place when in the barrel.
Our whirlpool hop addition was completely removed to rid liklihood of stale hop characteristics during aging from oxidation. Increased the bittering hop addition in the boil to counter the bittering loss during aging.
Note: cold crash beer after fermentation is completed before transferring to barrel to allow as much yeast as possible to flocculate out. |
