Notes: Hola Cerveceros y Cerveceras,
Esta es mi primera receta para cocinar en mi equipo Brew House.
Después de algunos años de aprendizaje y uno que otro tropiezo, finalmente logré terminar mi equipo para cocinar cerveza, fue una experiencia muy enriquecedora iniciar esta aventura y poner en practica mis conocimientos técnicos mezclado en el asombroso mundo de la Cerveza.
Hoy nos encontramos en busca de los insumos necesarios para cocinar nuestras primera "Revolution Blond Ale", hemos personalizado la forma de cocinarla para maximizar la extracción de olores y sabores propios del estilo y aportando el sello propio de Cervecería Revolución.
Método de Cocción: Sistema HERMS
La primera etapa es ajustar la temperatura del MASH en en 72°C y la del HLT en 80°C, en este momento aplicamos el Acido para ajustar el PH, las sales que aportan los iones necesarios para el perfil de nuestra cerveza las mezclamos con la Malta Molida, así evitamos que decanten en nuestro HLT y ayudamos a su mejor disolución en el agua, realizamos el Empaste y damos inicio al primer descanso a 64°C durante 60 minutos para propiciar el trabajo de la Beta-Amilasa. Si notamos una baja en la T° del MASH, utilizamos el HERMS para ajustar la temperatura a 64°C.
Pasado los 60 minutos, comenzamos el recirculado con un bajo caudal para evitar oxigenación, en este momento empezara a subir la T° del mosto debido al HERMS, lo ideal es llegar cerca de 69°C para propiciar el trabajo de la Alfa-Amilasa durante 30 minutos.
Terminando el recirculado, ajustamos las válvulas para trasvasijar el mosto desde el MASH al BOIL y trasvasijar el agua de lavado desde el HLT al MASH, el agua de lavado de granos esta a 80°C, esto detiene el trabajos de las enzimas y extrae de forma eficiente los azucares residuales alojados en las cascaras de Malta, este proceso de hace lento y controlado durante 30min.
Cuando la Olla de Hervido ya tiene mas de 1/4 de mosto, empezamos a calentar con el quemado en baja para no caramelizar, cuando el mosto comience a hervir, añadimos la primera carga de Lúpulo Amarillo encargado de aportar el amargor de la cerveza, este proceso dura 60 minutos, 10 minutos antes de terminar el hervido se agrega el Irish Moss y las Servomyces.
Terminado los 60 minutos de hervido, se apaga el quemador y se aplica la segunda carga de Lúpulo antes de iniciar Whirlpool, esta carga de Lúpulo es baja

Notes: Some mods that I made based on my mashing/sparge (and you guys have the water cooler mash tun that I was using back then). I bumped the base malt up to 9 lbs because I was not getting 78% eff on my mash and even his numbers for 78% didn't mesh with my brewing software. Go with about 9 lbs pale malt to get you in the OG range of 1.056. I fermented with White Labs 830 German Lager as Grady suggested at ale temps in the 68-72 dF range, Final beer was meh, ok I guess compared to the actual 1554.....mine was far too fruity & diacetyl. Notes that I took based on the finished beer kept the grain bill and hops the same, but changed the yeast to WLP029 German Ale/Kolsch with warm fermentation temp (68-74 dF). I don't stock that yeast, but can order it on a Monday and have it in store by Friday. You could probably have similar result with a dry yeast SD-23 if you can ferment it around 68-72 dF, I completely agree with Grady on fermenting with a lager yeast at ale fermentation temps. They produce a huge amount of diacetyl and off flavor by-products at those warm temps, but are masked/offset by the extreme peppery spice profile from the addition of Paradise Seeds. After sampling my version of this beer with Mike Dixon (national bjcp judge), I'm convinced that it could be made with WYeast 3463 Belgian Forbidden Fruit strain and fermented in the 70ish dF range as well.
What I get from the brewery (Grady Hull, asst brwmstr):
60% Pale malt, then carapils, munich, black and chocolate.
Mash at around 154° for 45m.
21 IBU's of Target for 35m, lager yeast fermented around 65ish.
He also commented on my recipe assumptions, which gave a few more hints.

Notes: OG was originally tested at end of boil at 1.05. I added about .5lb of DME and some belgian rock sugar (1-2 0z?) and got the final OG back up to 1.064. I suspect that my sparge wasnt efficient enough. The Rye really gummed up the sparging process and i had to really scrape my spoon to keep the liqueur flowing. I used rice hulls but perhaps not quite enough. my final ABV is likely to be closer to .6 than .7 but we will see. I used a yeast starter using Wyeast NW Ale. |
