- 49 C 20min (our lauter tun does get a bit unhappy when we skip this step, otherwise would skip)
- 67-68C 60min

- 76-78C mash out

Water Profile
- Target 150-200 ppm chloride, 0-100 ppm sulphates.
- CaCl2 & CaSO4 Mostly dosed in the mash, with some top-up in kettle.
Boil
- 60 min boil ltime
- Centennial 0,2 kg hops /1000 L wort
- 4% of extract worth of sugar dosed in 15 min before end of boil.
- 1kg hops /1KL wort at end of boil (15-20 IBUs).
- Use lactic acid to adjust post-boil pH to 5.0 if target is missed.
- Citra 2kg hops /1000 L wort at whirlpool @ 70-75C. 40 minutes.

DIRECTIONS
Mill the grains and mash at 153°F (67°C) for 60 minutes. Lauter, sparge, and top up as necessary to get about 6.5 gallons (25 liters) of wort—or more, depending on your evaporation rate. Stir in the brown sugar and boil for 60 minutes, following the hops schedule. At flameout, stir 5 minutes to conduct a whirlpool, add whirlpool hops, and allow to rest for 20 minutes. Chill to 68°F (20°C), aerate well, and pitch plenty of healthy yeast. Ferment at 70°F (21°C). When the beer reaches terminal gravity, add dry hops. After 5 days, cold crash, package, and carbonate. |

Notes: This recipe is based on Avery's, discontinued, Mephistopheles. However, Mephistopheles lies in wait, within his soulstone. For this beer contains the soul of Mephistopheles. Black as the soul of the demon lord. While this soulstone exists, Mephistopheles cannot be destroyed.

Recipe modified for my system and my process.
Add extract and simple sugar at 60 min mark on the boil.
Note: need to look up yeast nutrient additions for big beers. I have fermaid o in stock at home. May need to copy other big beer oxygenation schedules to get the yeast to eat enough sugar.
Aerate with pure O2 for 120 seconds at 1 L/min to target roughly 14 ppm dissolved O2.
Aerate again at 12 hours for 70 seconds at 1 L/min to target an additional 9 ppm. (recommended in Yeast book, page 84)
Target 40M cells per mL per yeast book's instructions on pitching high gravity beers. A 7 liter starter (constant stir) at 1.036 gravity with 100 B cells will result in approx 1107 B cells.
Start fermentation at 66°F ramp to 77°F @ 1.074 specific gravity. According to the Avery blog, it usually takes about 48 hours to reach 1.074
Age on bourbon soaked oak cubes until desired oakiness is reached. Drain bourbon before adding cubes to beer. It's extremely easy to overdo the bourbon flavor. You can always dose bourbon at the end if you want more bourbon flavor.
Consider adding vanilla, coffee, cocoa, coconut, or other great stout additions. I don't think peppers would work with the belgian yeast flavors.
If you aren’t able to get that much sugar out of the mash you may boil for longer and/or add a 50/50 mix of DME and Dextrose Corn Sugar to the boil to hit your OG target.

Notes: I wanted to make a honey beer where you could actually taste the honey. Usually it's covered up with malt, hops, or other ingredients. This is just pilsner malt, 20% honey, a bit of hops, and lager yeast.
Expecting to age this a couple of months.
Although I put it in the BGS category, it is not that at all; I just wanted a framework. This would go under experimental (34C) or alternative sugar (31B). |

Notes: This is a clone of Sexual Chocolate by Foothills Brewing Co., as found on TastyBrew.com blog (http://www.tastybrew.com/forum/thread/154676); as the finalized with a few tweeks to the recipe.
1: The blog said to NOT add cocoa powder after trial due to graininess in the final beer and the need to chill and re-rack, but he used 6 oz at secondary, dry. I shall use 3 oz, mixed with 6 oz boiled water that will hopefully moisten the cocoa and reduce graininess in the final product and encourage settling during secondary.
2. I'm going to use homemade chocolate syrup in place of Hershey's Special Dark Chocolate Syrup at kegging.
3. My Homebrew Supply Store did not sell Wyeast anymore; so while the original recipe uses Denny's Favorite 50, the closest strain by White Labs is California V. So, we'll see how this goes! |

| Notes: I aged this beer for about a year. I also left it in a secondary for about a month before bottling. I added a second dose of yeast 3-days prior to bottling and used DME for priming. It is most similar to a Chimay Ale. I mistakenly used amber candy sugar so my ale came out darker than the style so make sure you use clear or light candy sugar if you care about color. This was one of my best brews because I cellar aged at 55-60 for a long time. Bottling abv was about 9% whereas a year later it climbed to 9.4% (Could be my measurements but it seems to get more alcoholic with aging and the secondary yeast pitch. I boiled my wort for about 60 minutes and used a single mash method. The name Table VIII comes from Army tank gunnery tables where we had to qualify our crew and tanks to fight. This brew is in memory of my crew back in '88! Best job I ever had. |
