Notes: Description - Historically brewed to compete with the rising popularity of Pilsner in the 1800s, Kölsch style beer is defined by the Kölsch Konvention of 1986 as a "light, highly attenuated, hop-accentuated, clear, top-fermenting Vollbier (full beer)" and was served in a 200ml glass called a Stange. Today we brew PK true to form utilizing all German malts, yeast and serve it in a traditional .2L Stange. Tasting Notes: Soft, lightly sweet almost honey like malt character. Medium-low to medium Noble (floral, spicy, herbal) hop aroma with light sulfur and fruit (apple, cherry, pear) notes. Fuller yet light body with crisp dryish finish.
Notes: Kolsch - Dieter recipe with tweaks from Exhibit "A"s Goody Two Shoes per CB&B Article from 4/15/19, and Pfriem's Kolsch. Floor-malted barley added per Ex.A andTet hops added per pFriem. Crocess taken from Ex. A, 40 day crash min, 2 degrees per day from 68f to 48f then 4f8 to 38f and 38f to 32f once packaging is determined. London Lager Malt, Cologne malt & hop blend used due to low quantity of supplies.
Brewday Notes: Smooth brewday, no notable issues. Transferred at .75 ppm oxygen.
Brewed: 3/30
Mash Ph: Not taken, PH meter broken
OG: 1054 hydrometer

This yeast does not attenuate very well so we purposely mash at a low temperature (64C/148F). The yeast is also highly flocculant (likes to settle out) so giving the bottom a gentle stir once a day during fermentation can help it from falling out too soon.
Cool wort to 19C (66F) and aerate well. Ferment at 19-20C (66-68F) until complete. Dry hop as soon as krausen starts reducing. This yeast drops brilliantly clear without need of any clarifiers. |

Secondary 8/29
Ferment at 63 degrees
Split the whirlpool hops; adding half at flameout. The other half once down to 165F.
Dry Hop in Two stages - 4 days each, split the dry hops in half also. Add the first half to primary. Stage one 8/29. Short .5 centennial, switching 1.0, increasing Apollo by .5.
10 day fermentation (63-64F at first, then ramp up to 68-70F once fermenation slows.
8 day, 2 stage dryhop in primary at 68-70F.
Rack to secondary and 4 day cold condition in the secondary at roughly 39F (basically refrigeration).
Force carb and drink 3-4 days later, or bottle and drink 1.5 to 2 weeks after priming.

So I took the brewery worksheet figures (referenced with the red circle), scaled them down, and plugged it into Greg Noonan's Vermont Pub & Brewery's Water Witch: https://byo.com/resources/brewwater
As you can see, the layout of this calculator looks incredibly similar to the snapshot of the brew sheet.
Here are the results for 6 gallons: (Keep in mind, the Alchemist reportedly uses "Plaster of Paris" instead of Gypsum. Also, homebrewer lactic acid is typically 88% strength vs. the 85% version shown here).
________________________________________
I supplied two different results (in color). Notice the difference when using Calcium Sulfate Anhydrous (Plaster of Paris) vs. Calcium Sulfate Dihydrate (Gypsum) that must be used to hit 750 mg/L.
The information when whittled down, lines up... 6 gallons, approx. 21.6 grams plaster of paris, 1.2, grams calcium chloride, and then adjust mash pH to 5.1-5.3 with lactic acid. |
