DIRECTIONS
Mill the other grains before adding the rice hulls. Mash at 152°F (67°C) for 90 minutes. Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort. Boil for 60 minutes, adding hops according to the schedule. After the boil, chill to about 67°F (19°C), aerate, and pitch yeast. Ferment at 67°F (19°C) for 3 days, then let the temperature rise to 72°F (22°C). When fermentation is complete, crash, package, and carbonate to about 2.5 volumes.
For spices, we’re going to add…nothing. You can if you want. We’ll be over here, with the hops.
The best thing about the hopping for this recipe is how perfectly the hop is suited to the task, which means we use one hop in two additions. Get yourself 2 ounces (57 g) of Pacific Jade, a New Zealand hop variety that features…wait for it…lemon, orange, pepper, and herbs. It even has a healthy double-digit alpha-acid percentage. You’ll add 20–25 IBUs of it in a 10-minute addition, and whatever’s left at flame-out. Done. No spice grinder, no dried peels, no flower petals, and a bright, fruity, spicy flavor and aroma. |

I just realized I accidentally added 1 more lb wheat that I was supposed to use for another beer. Adjusted the recipe to include it and adjusted efficiency.

last time i did 1056 which was pretty clean. i think this time ill try something more traditional, there is a wy1010 american wheat? or maybe use one of the german ones....? recipe from wedding beer was wy3333 german wheat.
removing the coriander and orange peel.
also adding 2.5 lbs raspberry. will get frozen, thaw, blend, and add after fermentation is going.

♦ SESSION NOTES: Screwed up the last ingredient of Special B at 32 ounces and should have been maybe 3 OZ. This cause the SRM to way over scale. This is going to be a dark beer. (140 - 155 L) Castle - The darkest of the Belgian crystal malts, Special B will impart a heavy caramel taste and is often credited with the raisin-like flavors of some Belgian Abbey ales. Larger percentages (greater than 5%) will contribute a dark brown-black color and fuller body.

♦ STANDARD BREWING NOTES:
Turn off water softener. Purge water faucet.
Create 7 gallons sparge water. Bring to 154° strike temperature.
Prime pump. Push water through hose.
60 minutes – Add tablespoon 5.2 pH balancer.
Add grain – Sparge at 144-152° for ___ minutes (Minimum 60)
(One-gallon loss during sparge process)
Water burn rate: 1-1/2 gallon per hour.
Drain GRAIN from kettle. Adjust water height of ___ (7 gallons)

I like to use hybrid yeasts to make lagers, particularly WLP029 German Ale/Kolsch, despite concerns expressed by others I would never get that “crisp lager character” using such a method. Well, I used the following recipe to make a beer that took 1st place in its division in a local BJCP comp with a score of 40 points. Not one judge mentioned anything about the beer not tasting like a traditional lager. The key is pitching a big, fresh starter and keeping fermentation cooler than White Labs recommends for the first few days.
