Ingredients
7 lbs. (3.2 kg) Pilsner malt
2.5 lbs. (1.13 kg) Vienna malt
8 oz. (0.23 kg) aromatic malt
12 oz. (0.34 kg) Belgian Caramel Munich malt (60 °L)
8 oz. (0.23 kg) Belgian Caramel Vienna malt (20 °L)
4 oz. (113 g) Belgian Special B malt
4.5 AAU Saaz hops (60 min.) (1.5 oz./43 g at 3% alpha acids)
2 AAU Saaz hops (30 min.) (0.66 oz./19 g at 3% alpha acids)
3 AAU Saaz hops (15 min.) (1 oz./28 g at 3% alpha acids)
Belgian ale yeast slurry (White Labs WLP515 or Wyeast 3655 is preferred)
1 cup corn sugar (if priming)
Step by Step
Mash at 152 °F (67 °C) for 90 minutes. Runoff and sparge with enough water at 170 °F (77 °C) to collect 7 gallons (26.5 L). Bring to a boil and boil for a total of 90 minutes adding hops according to the ingredients list. Remove from heat, there should be 5.25 gallons (20 L). Cool to 70 °F (21 °C), and pitch yeast. Allow temperature to free rise during active fermentation, but don’t allow the fermentation temperature to exceed 80 °F (27 °C). Rack to secondary and condition cool (50 °F/10 °C) for two to four weeks. Prime and bottle or keg and force carbonate. Serve at 50 °F (10 °C) in a “bolleke.” |

Notes: Lower IBUs (<10) if you want it more acidic, Higher IBUs (>18IBUs) for lower acidity. 18 IBUs or more to ensure final pH is >3.6 for restrained acidity.
Medium-toast French oak spiral for 3-5 weeks (to taste preference)
Pitched Yeast Bay cultures at 72 F and held for 12 hours, ramp up to 88 F over 7 days; approximately 2 weeks in primary
Pitched SARA Cellarman dregs (from starter) in secondary; approximately 4-6 months in secondary
Dreg Starter (for secondary fermentation)
1. Refrigerate your bottle for one week.
2. Open bottle or can and sanitize the lip with a flame. NOTE: You may also want to spray sanitizer on and around the cap before opening.
3. Gently pour the beer into a glass, leaving the sediment (yeast) in the bottle.
4. Swirl the sediment/yeast in the bottle and re-flame the lip.
5. Pour sediment into a sanitized container.
6. Grow your yeast using a stepped starter – start with 200mL of wort (1.020), then let ferment for three to five days or until fermentation noticeable. Then add an additional 800mL of wort (1.030) and let ferment an additional three to five days. Ramp up again if necessary. |

Notes: Traditional Norwegian farmhouse ale uses pale malts. Although wort is often fermented "raw" (that is, without boiling), this recipe uses a very short 10 minute boil to sanitize the wort and produce some bitterness from the hops.
The malt bill is adapted from my saison recipe. I also use Styrian Goldings hops in my saison, and since most Norwegian recipes I've found don't give much information (the closest says "any central European Nobel hop" should work), so, Styrian Goldings it is.
Except for this iteration (5/11/17), I'll be substituting Hallertau Mittelfruh, added to the mash, and Cascade and Lemon Drop added at the beginning of the boil and at 5 minutes. Remember, this is only a 10 minute boil.
This beer will be fermented warm (80F) with traditional Kveik yeast.
If I could add anything to this recipe, it might be some juniper branches.

Notes: Cloned the recipe from Ex Nova Brewery's "The Most Interesting Lager in the World," which is one of their year-around flagship beers. I did a side-by-side comparison with one of their crowlers and it was perfect. Mine was a bit better probably because I lagered it in my shed for about 2 months during a Portland, Oregon winter. Can also use Que Bueno yeast.
Add a twist of lime in the glass before pouring and STAY THIRSTY MY FRIEND!
Strike water:
1.3 g CaCl3, 0.25 tablet Campden, 0.9 g Gypsum. and 2.7 ml lactic acid
Sparge water:
1.1 g CaCl2, 0.25 tablet, and 0.75 g Gypsum |
