Dog E is a very special beer. This beer commemorates our 9th year in 2016. This beer originally appeared as AB:04 in 2010, perhaps the most sought after beer we ever brewed. Dog E is a 16.1% Imperial Stout brewed with copious amounts of dark malts, pure cacao and coffee, balanced by the subtle addition of naga chili, and barrel-aged. Perfect for ageing in your cellar, or drinking fresh if you’re lucky enough to get your paws on a bottle. With stronger styles (like imperial stouts), feel free to cellar your beer and try a bottle every few months to see how the flavours have developed – often the beer picks up new, incredible flavours.

Notes: Day before brewing prepare 1L starter from blended yeast: WLP 672 - Lactobacillus brewis, WLP 653 Brettanomyces Lambicus and T-58 SafAle.
17.04 Brew day. Mash at 67-69C, Mashout 78. Water PH before mashing 5.6, after 4.3. Sparge water PH 6.6. Filtration as usual.
Boil 60 min.10g Fuggles - 60in. Yeast Nutrient 15 min. Cool the wort down to 27 degrees before added mixed culture of yeast. Collected 14.5L with 16.6 Brix. PH - 5.1
Fermentation started after 10 hours, very active.
23.04 Ferment. finished with 1.016.
24.04 added 2100g of frozen blueberry. Pasteurized before in water 80C - 15 min. Transferred beer for SF. |

Notes: Do not use an airlock! See https://www.maltosefalcons.com/tech/guide-saisons-and-saison-yeasts about backpressure issues with WLP565. Well, that being said, just don't fill the airlock as the lid will do a better job keeping anything out of the fermenter.
Start fermenter at 19C for 3 days. Every day increase by .5C until 26C at day 17. Shooting for 1.008 and 83% attenuation as I am hoping for a slightly dry Saison to balance out the CaraVienne.
Will be using Tesco Ashbeck for the water.
Going with a 2L starter and will be setting aside one jar for a future batch.
This was an awesome batch of Saison. The Helles that was on tap almost didn't get touched until this was finished. |

Notes: Mix grain with 4.5 gallons of 162* strike water to reach a mash temp of 150*. Hold for 60 minutes. Vorlauf until runningas are clear. Sparge the grain with enough water to collect 6.5 gallons. Boil for 60 minutes, adding hops. After the boil add 0 minute hops & whirlpool in the kettle. Let stand for 20 minutes, the chill to slightly below fermentation temp, about65*. Ferment at 67* for 7 days. Add dry hops & raise temp to 72* for 5 more days. Once terminal gravity is reached, cold crash to 35* for 48 hours, then rack to a keg. Target is 2.5 volumes. |
