Notes: BYO states OG = 1.061, FG = 1.012, IBU = 56, SRM = 5, ABV = 6.5%.
Heat water to 158 F. Add malt extracts and dissolve. Add first wort hop, bring to boil.
At boil add 0 min hops, boil 60 minutes.
On heat off, add 0 minute hops.
Cool wort to 180 then add whirlpool hops, allow to stand for 20 minutes, chill to 64.
Oxygenate wort. Pitch yeast.
Mix dry hops and divide into thirds.
1/3 added after two days, remove after two to three days.
1/3 added at end of fermentation, remove after two to three days.
1/3 added after three days end of fermentation, remove after two to three days. |

Notes: -Honey is Clover Honey
-Grapes are 1 quart of White Muscat Grape Juice Concentrate, LATE ADDITION (at 3 days into fermentation)
-Boil 6 gallons of water, add DME and honey at start of 75 minute boil. Add hops at 60 minute mark. Add Saffron at flameout.
-After vigorous fermentation slows, at 3 days, add white muscat grape juice concentrate and AERATE. Ferment 5-6 more days then rack to secondary and let sit for 12-14 more days.

Two weeks ago I bottled what is probably the best beer I've ever made in my single year of brewing. I call it an "Imperial Juniper Ale," which is essentially an imperial IPA with lots of juniper, a flavor I'm really keen on. I thought I'd share the recipe with reddit and welcome any feedback on the recipe, though this first batch turned out spectacular. I don't know much about hop varieties; I chose these by selecting "pine" aroma hops from the aroma wheel, and they seem to work well together and with the juniper: https://www.hopunion.com/aroma-wheel/
Imperial Juniper Ale
Makes 5 gallons.
OG: 1.086
FG: 1.008
IBUs: 123
Grist
13lbs pale ale malt
2lbs vienna malt
1lb extra light malt extract (I BIAB and my kettle is small)
0.5lbs crystal 60L
1lb evaporated cane juice added at boil
1lb turbinado sugar added at boil
Hops
2oz Chinook FWH
1oz Northern Brewer FWH
1oz Northern Brewer whirlpool for 30 minutes
1oz Chinook whirlpool for 30 minutes
2oz Styrian Bobek whirlpool for 30 minutes
1oz Chinook dry hop for 7 days
1oz Northern Brewer dry hop for 7 days
1oz Chinook dry hop for 4 days
1oz Styrian Bobek dry hop for 4 days
Yeast
50/50 mix of WLP001 and WLP099 started at 66F and bumping up to 70F within a week.
Method
Mash all grains at 148 for 90 minutes. Add 0.5oz crushed juniper berries into the kettle with the whirlpool hops. Add another 0.15oz juniper with the last dry hop addition.
Bottle with 4oz of maltodextrin and 4oz of corn sugar. ”

Notes: Steep the Cara-Pils in hot water at 152° for 30 minutes, then remove the grain and stir in extract until completely dissolved. Heat the water to boiling and add hops. Boil for 45 minutes and add the Irish Moss. Boil 15 minutes more, then turn off heat and chill beer to 68° as quickly as possible. Rack to the primary fermenter and pitch the yeast.
After primary fermentation has completed (2-3 weeks), dump the 10 pounds of frozen cherries in the bottom of the fermenter and rack the beer on top of the cherries. Ferment in secondary for as long as you can stand it. I recommend a minimum of two months. Then, bottle with corn or cane sugar to 2.5 volumes of CO2. |

Notes: O.G was 1.060 and F.G was 1.011 ABV 6.43% Great color and clarity. aroma is grainy malt hop aroma is lite to medium citrus, tangelo. taste follows aroma sweet grainy malt back bone with a nice pop of bitterness, citrus and tangelo. mouth feel is medium with a nice crisp, clean dry finish. feel's dryer than the F.G would suggest. This is one of the best beer's I have brewed and will definitely be brewing this one again.
Second batch will be brewed on 05/05/18 for big brew day. hope to have it bottled and ready to drink by June 6th? |
