Notes: Brewed 12/09/21. 16.5 L water, 2 g CaCl2, added 1.5 ml lactic acid, mash pH 5.2. Rest at 135 10 minutes, then raise to 144 F and pull decoction. Return decoction and rest at 152 F for 15', then raise to 170 F for mash out. Sparge with water, 3 g CaCl2, 1 ml lactic acid, pH 5.5. Cool to 65 F and pitch, 2.5 L slurry restarted with 0.5 L on brew day. Ferment at 50 F.
1/10/22. Note that temp has dropped to mid-40's due to cold snap. Remove from keg fridge and allow temp to rise to 65 F for 24 hours, then place back in garage at 52 F. Gravity 1.018, sample didn't ferment out further. Pitched 500 ml of actively fermenting yeast, brought back to 65 F for two days, then placed back in keg fridge. Keg kept in 45 - 48 F range. Carbonation slowly taking place; gravity 1.017 on 1/27/22. Dropped temp to near 32 F. Sample taken 03/11/22 shows gravity 1.017. |

Notes: First attempt at brewing a beer.
Just under 4kg of Venitan red LME, desolved in water and boiled for 10 minutes or so.
Hops added, 60 minutes with temp between 72-79 degrees. Hard to do with a non constant heat. Hops removed.
3L of water added post boil to bring volume up from 15L to 18L. Yeast added at approx 30 degrees and 27 degrees.
SPG was around 1.07 before dilution and ended up around 1.06. Sat at 1.05 for a long time before settling at 1.06 after cooling to 30 deg.
Don't Judge me for this pls, beer is hard and it's my first try. |
