Ferment at 66 degrees
Raise to 68 for 3 days
Then raise it 1 degree a day until you get to 72. You will reach 72 degrees after one week. However on the 3rd day, at the end of the third day you need to add the dry hops and keep them on the beer for 10 days.
After those 10 days are up. It will have fermented for 14 days (two weeks)and will be ready to be bottled. We shall remove dry hops and auto siphon the bucket using a fine mesh hop bag on it to strain out any trub. Add priming sugar into the bottling bucket and bottle.

This is meant to be a really really HOPPY brown ale. I hate brown ales so I'm hoping this is something more along the lines of DFH's Indian Brown Ale or maybe Grand Teton's Bitch Creek. I've never done a brown before so this will be a learning experience.
Some of the core parts of the grain bill were taken from a podcast on Brown Ales I heard. |

Notes: Heat 3.5 gal of water to 150F. Place grains into muslin bag and steep for 30 min. Remove bad after 30 min and lightly squeeze the bag. Bring the wort to a boil. Boil for 60 min. Begin hopping with 30 min left in the boil. Use the above rates for hopping. When there is 15 min left in the boil, add the 7lbs of dry malt extract. After all additions are done, chill your wort. Place 2 gallons of water in the fridge to chill. Add this to your fermentor after you have cooled the wort. when everything has cooled to 74 degrees, sprinkle your yeast on top. After fermentation has ended, add 1 oz of Citra hops for 4 days before bottling. |

Notes: Appearance: Pale amber, hazy in the body – attributed to the lack of gelatin in the keg. I’ll use gelatin for all appropriate styles to follow.
Aroma: Deliciously hoppy, sharp and crisp. Not as much as I thought would be present. Amarillo hoppiness definitely present in the nose.
Taste: It is a little sweet, which I was afraid of, and makes me miss my style target. But after I console myself for that failiure, the beer tastes pretty goddamn good. The hop bill really went to work for me, ramping up from the middle to back palate and lingering for a bit after you swallow it down. The malt is pretty unassuming, and it attributes a good drinkability and thin mouthfeel, but let’s be honest – this beer wasn’t about the malt, it was about the hops. I freaking love hops. From Others: Smooth. A bit sweeter on the palate for the style, attributed to the higher FG. Sweet on the front, pleasantly bitter and a little earthy (Northern Brewer) on the toungue and lasting through the finish, with a little herbal taste on the finish. A quite drinkable PA! |

!*I enjoy the slight "grain" taste which has been smoothed over with the vanilla. Ensure to boil for 75 minutes to decrease DMS and get rid of the corn aroma. Otherwise, a decent cream ale that would be a good summertime staple. |

Notes: I steeped grains for 30 min. I then added the 2 lbs of Pilsen Light Dry Malt and 1 Oz Mt. Hood Hops to the boil for 60 min. My understanding is that by splitting the dry malt extract into 60 min. and 15 min. is to achieve a higher attenuation of the grains. At 30 Min. I added another 1 oz of Mt. Hood Hop pellets. At 15 min. I added the other 6 lbs of dry malt extract .Once cooled to 68F, I took the OG which was 1.061. I added the yeast and fermented at 65-67F for 9 days at which point the FG was 1.012 and fermentation appeared to be complete. I bottled with priming sugar and left at room temp for another couple of weeks before chilling it at 33-43F for "lagering". It is a tasty beer. |
