Used Lallamond London ESB
Wyeast 1968 (London ESB) or White Labs WLP002 (English Ale) yeast
Bring 1/2 gallon of water to 155° F, add crushed grain and hold for 30 minutes at 150° F. Strain the grain into the brewpot and sparge with one gallon of 168° F water. Add the malt extract syrup, dry malt extract and bittering hops. Bring the total volume in the brewpot to 2.5 gallons. Boil for 45 minutes, then add the flavor hops and Irish moss. Boil for 13 minutes, then add the aroma hops. Boil for 2 minutes, then remove the pot from the stove. Strain into the primary fermenter and add water to obtain 5-1/8 gallons. Add yeast when wort has cooled to below 80° F.
Ferment at 68° F for 7 days then rack into secondary. Ferment until target gravity has been reached and beer has cleared (approximately 3 weeks). Prime and bottle. Carbonate at 70° to 72° F for 2 to 3 weeks. Store at cellar temperature. |

10 mars: mise en tourie ET ajout d'un extrait de 10 g de houblon Perle bouillis dans de l'eau de source.
J'ai 21 1/2 litres de bonne bière(j'ai ajouté 1 à 2 litres de «reste de bière» provenant de demi-litre de bière de l'IPA de février.
La bière a perdu ses notes tropicales (bananes, pamplemousse) pour des notes plus florales -comme celle du Perle). |

Notes: Liquid malt extract is Coopers hopped stout kit 1.7 kg so which contributes around 30 IBU to final wort. That is, the IBU indicated in recipe summary only accounts for 20 g Goldings @ 20min.
All malt extract other than 750g light dme is added as a late addition steep to avoid excess caramelisation from the low volume boil, and allow more utilisation from the Goldings.
Yeast can be recultured from any Coopers Brewery commercial beer. I used yeast harvested from 2 x 375ml bottles Coopers Original Pale Ale to make a starter.

Notes: ROAST PUMPKIN (Homebrew Beyond the Basics, 159):
1. Cut pumpkins in half and place upside down on baking sheet. Bake at 350* for 90 minutes or until soft and caramelized.
2. Let cool completely, scoop out flesh, place in freezer bags.
3. Squash pulp in freezer bag into a fine mush. Store up to 3 days till brew day.
- Extract: Steep pumpkin in grain bag along with rice hulls and roast barley (15 minutes - just to extract color from barley & flavor from pumpkins. There is very little starch conversion to wait for!
- All grain: use lots of rice hulls in mashtun
COFFEE Cold Brew made 2 days before bottling:
1) Add 225 grams (.5#) crushed medium-roast beans to 1-qt mason jar. Top off almost to top, leaving room for shaking. Let stand at room temperature 24 hours.
2) Chill overnight and strain with cheesecloth the morning of bottling. Discard spent beans.
