1. Started with 4 gallons of distilled water and added all salts listed to Mash - heated to 167F and hit mash temp perfectly on mash in

2. Mashed normally for 60 mins with a brief recirc using a pump at 30 mins.

PH - 5.2

3. Mashed out at 170 for 10 mins then sparged with room temp jugs of RO - ~3.75 gallons

4. Boiled and followed hop schedule and whirlpool.

5. Cooled and transferred to fermenter. Set in chamber and cooled to 66 to pitch decanted 1318 starter

6. Fermentation activity in a few hours. Dry hopped day 3 then let ferment for 10 days before crash cooling with co2 filled balloons on the blowoff. Took about 1-2 fills/day

7. Closed transferred to keg with loose dry hop 2 in it. Used a clear beer draught system. Let the beer sit at room temp for 24 hours.

8. Put on co2 at 2.3 lbs

Notes: Overall Impression:
A clean, crisp, delicately-balanced beer usually with a very subtle fruit and hop character. Subdued maltiness throughout leads into a pleasantly well-attenuated and refreshing finish. Freshness makes a huge difference with this beer, as the delicate character can fade quickly with age. Brilliant clarity is characteristic.

Aroma:
Low to very low malt aroma, with a grainy-sweet character. A pleasant, subtle fruit aroma from fermentation (apple, cherry or pear) is acceptable, but not always present. A low floral, spicy or herbal hop aroma is optional but not out of style. Some yeast strains may give a slight winy or sulfury character (this characteristic is also optional, but not a fault). Overall, the intensity of aromatics is subtle but generally balanced, clean, and fresh.

Appearance:
Very pale gold to light gold. Very clear (authentic commercial versions are filtered to a brilliant clarity). Has a delicate white head that may not persist.

Flavor:
Soft, rounded palate comprised of a delicate flavor balance between soft yet attenuated malt, an almost imperceptible fruity sweetness from fermentation, and a medium-low to medium bitterness with a delicate dryness and slight crispness in the finish (but no harsh aftertaste). The malt tends to be grainy-sweet, possibly with a very light bready or honey quality. The hop flavor is variable, and can range from low to moderately-high; most are medium-low to medium intensity and have a floral, spicy, or herbal character. May have a malty-sweet impression at the start, but this is not required. No noticeable residual sweetness. May have a slightly winy, minerally, or sulfury accent that accentuates the dryness and flavor balance. A slight wheat taste is rare but not a fault. Otherwise, very clean.

Mouthfeel:
Medium-light to medium body (most are medium-light). Medium to medium-high carbonation. Smooth and generally crisp and well-attenuated.

Comments:
Characterized in Germany as a top-fermented, lagered beer. Each Köln brewery produces a beer of different character, and each interprets the Kölsch Konvention slightly differently. Allow for a range of variation within the style when judging. Note that drier versions may seem hoppier or bitterer than the IBU specifications might suggest. Due to its delicate flavor profile, Kölsch tends to have a relatively short shelf-life; older examples and imports can easily show some oxidation defects. Served in Köln in a tall, narrow 200ml glass called a Stange.

History:
Cologne, Germany (Köln) has a top-fermenting brewing tradition since the Middle Ages, but developed the beer now known as Kölsch in the late 1800s to combat encroaching bottom-fermented pale lagers. Kölsch is an appellation protected by the Kölsch Konvention (1986), and is restricted to the 20 or so breweries in and around Köln. The Konvention simply defines the beer as a “light, highly attenuated, hop-accentuated, clear, top-fermenting Vollbier.”

Characteristic Ingredients: Traditional German hops (Hallertau, Tettnang, Spalt or Hersbrucker). German Pils or pale malt. Attenuative, clean ale yeast. Up to 20% wheat malt may be used, but this is quite rare in authentic versions. Current commercial practice is to ferment warm, cold condition for a short period, and serve young.

Style Comparison:
To the untrained taster, easily mistaken for a cream ale or somewhat subtle Pils.

Kit was given to me to brew, featuring a 9-month old grain crush. BRY-97 yeast was expired, so I'm using my slurry Conan on this.
3, 1oz bags of Simcoe included of unknown storage quality these last 9 months will be used.

Pilsen DME is getting thrown into this recipe because I have an partial bag lying around to get rid of. QP of honey malt same way.

Therefore, I'm going to boil a smaller volume of over-all water (7 gal vs 7.6 gal), increase boil time to 75 minutes (+15 from 60) and then top up to 1.046 not knowing how well the 2-row converts overall.

Notes: It's gonna be a tooth enamel remover for sure.The Hop smell was overwhelming but in a good way,the O.G. was 1.054 @70*F .The F.G. ended up being 1.012 @70*F,I carbed a 1pt sample to 2.4 volumes,pretty interesting brew,Malty,not overly sweet can't taste the alcohol,hop bitternes not as strong as I thought maybe due to the honey malt.beer is still green,what's it going to be like in a couple of weeks?don't know but for now it's pretty darn good.CHEERS..

First brewed 30/08/2015. Want to try push mash temp up and see whether improves mash efficiency.

MASH NOTES.
Only getting around 60-63% efficiency. Have tried all manner of things to bump up. Looked through old notes and remembered that even with a pre Tun heat up, I still need an extra 2 deg C on top of brewers friend calcs. Last 3 brews all around 64-65 deg C mash temp on purpose.(wanted drier beers then but efficiency suffered) This time have bumped up mash temp extra 2 deg aiming for 67-68 deg C over 90 mins. Extra 2 deg C last thing to test before changing to smaller esky cooler Tun.

I have tun insulated with cardboard and wrapped in blanket.

After BREW Notes
Mash temp rise to 68deg C haven't worked. Hit 1.076 but 22L. This is 63% which is my standard efficiency. I added 2L of fresh water to bring it down to 1.070 may add another 1L to make 1.067. Brewer's Friend calcs at 63% efficiency. Had my usual 34 liter to start boil. Left a bit more in pot so not as much trube went in, but still 6L off. Not sure why the extra boil off today.
The extra 2L of water isn't something I like to do, but ABV would be too high for 1 packet of dry yeast. Extra water will bring with some oxygen to aid yeast. Should it attenuate as per all my other brews 80%+ 1.010 i'll end up with an imperial-ish 7.8% 1.012 finish 7.6% down side is I wanted a hoppy plain-ish IPA lucky the extra IBU's are in it as it will still be a balanced beer with a 1.012+ finish.

FG 1.016 added extra water.ABV 6.69%

Notes: Made a starter the NEW way. 3500ml of filtered water with 1# DME and it made a rocking huge amount of yeast. Made it a week before and cold crashed for 3-4 days to pack it. Poured off and onto the counter that morning.

Strike temp was 138 but had been off heat for a few minutes and stabilized there - disc was not hotter than liquid. Lost 7 degrees. 20 min at 131. Brewers' Friend strike temp calculator was close but said we'd hit 129 instead.

First decoction pulled and brought to 153 for 15 min then boiled for 15 min. Added back in slowlyyyyy to bring it to 153. Held for an hour then tried to mash out. Mash stuck badly and we stirred and scraped and piddled for a half hour before calling it - NO mash out. Started sparge. First runnings at 95!

Collected 17.5g. after a 2 hour sparge at least! Preboil gravity 1.049. Boiled 75 minutes and cooled and pitched without incident.

Fermented for 4 days and the FG was 1.012 so we bottled about 3g and cold crashed the rest. Added enough white table sugar dissolved in ~1/2c. boiling water (simple syrup) to get to 3.9 volumes as stated in the Brewer's Friend Calculator. Left bottles at room temp for 2 weeks. Tried one - carbonation a bit aggressive, but fine - tasted fantastic!

After 2 full weeks of cold-crashing, FG at 1.010. Kegged the rest.
Very good wheat beer! The kegged stuff is very good, the bottled is excellent. The kegged is still not clear 5 weeks from brew day but clearing. The bottled is significantly over-carbonated. Three months out and the kegged Crystal Hefe has fallen Very clear and is fantastic.
