Notes: Two packets of Lalvin D47 Wine Yeast (only ferments to ~ 14%)
Yeast Starter directions from "Compleat Meadmaker" - 6.5 cups of water, tablespoon of Light DME, 1/2 cup honey, 1/4 tsp Nutrient, 1/4 tsp Energizer. Bring water, nutrient, energizer, & malt extract to a boil for 15 minutes, remove from heat, add honey, cover with foil. I'll let this sit on my stir plate for about 42 hours before pitching.
Warm a couple gallons of water to ~140 F or so to mix in the clover honey which was purchased at Costco. Use chilled water to bring down to pitching temp & volume up to ~5 gallons (I went up to about 5.75 gallons). OG for me was 1.12-1.13.
Then follow nutrient additions with 1/4 tsp energizer and 1/2 tsp nutrient at 24 hours, then again at 48 hours, then again after 30% of sugar has been depleted. Two weeks of primary before racking to secondary. Warm the organic "strawberry spread" from Costco in some ~140-150 degree water just to be safe, then rest until room temp, then add in to secondary for two more weeks before racking a 3rd time. |

Notes: from an all grain recipe in 2002, which had good comments from me on taste. halving the black patent malt. Also dropping the hops to 1.25 oz to put within dry stout specs. Also using my new favorite yeast strain, instead of Wyeast 1056. Also dropping mash temp down to 150. Will also try to reduce PH of mash water. We will want to see if we can improve on last time's efficiency, which was 58% for this recipe. shooting for a long sparge/lauter. |

- 1-2 days before brewing make a 1 liter starter of 1.040 wort, and add your vial of WLP644. Let it sit at room temperature until use. Also make 1 liter of 1.040 wort, and pour OYL-605 into the starter. Incubate 24-48 hours at room temperature to increase the cell count.
- Mash in at 145°f for 60 minutes; if hops have to be used, make sure to add the hops to the mash.
- Bring the wort to a boil, add salt and coriander, and then turn the heat off.
Chill the wort down to 95°f, and transfer to a CO2 purged carboy or keg. Add the 1 liter of OYL-605 Lactobacillus Blend starter. Allow it to sour for 24 hours. No external heating is required.
- After the souring phase, pitch WLP644 Trois. You can aerate if you feel necessary.
- After 2 weeks a stable gravity should be reached.
- Rack or transfer off as normal to bottles or a keg. |

Notes: 1. Used center burner to bring it to 170F but it took too long; moved it to outer burner and it shot up to 200F pretty quick. Took off towels/insulation and at the end of 80m, it was down to 160F. Not sure how this'll affect the flavor.
2. Soaked medium toast oak chips in bourbon overnight, then decided to add them, along with vanilla pods, to the secondary. (6 Jun)
