Notes: This was my first all grain batch and decided to go big or go home. I realized a few things before I started. My lauter was definitely not large enough so I bought a bigger one and improvised.
I missed temperature on the Mash, hit 160+ and had too much volume to add cold water so I just went with it. I mashed out at 172.
I plan on main fermenter at least 2-3 weeks if not a month to a month and a half. Secondary will go as long as I can stand.
I don't want to be too pushy with this batch with the hop schedule as big as it is, I mean 4 oz at boil start, and another 7 at 10 minutes. Its a beast. |

Dry hopped with 200g citra and 200g El dorado on 20/08/2017. Added final 0.5kg sugar. Cold crash on 22/08/2017. Keg on 23/08/2017.
Kegged 28/08/2017 with 100g table sugar - good aroma, looks and tastes like orange juice. Potentially bonus character due to the refermentations effect on hop. |

CRASH cool for DMS. aerate when cooled
Pitch at 48, ferment at 50 for 5 days, then bump 2 degree per day until 60 for 2 days (diacytl rest), lager/carbonate, decrease 2 degrees per day down to refrigeration temps so you don't stress yeast..will probably start peak at 8 weeks old
Don't raise temp if there is any sulfur or smell of off flavors
Can use any German lager yeast.

I'd say the lime is noticeable but not quite prevalent enough. I would try upping it to 2/3oz next time. I had intended to add 1oz of zest but forgot to actually zest any limes until the 10 min addition went in - so we got about 8 grams before it was time to toss it in.
All in all I'd say this recipe is great. Noticeable hoppiness in a 4.5%ABV beer. It's really been a hit with my friends during these hot Florida days we've been having.
EDIT: Forgot to mention, went from grain to glass in 11 days. |

Notes: Just finished first attempt at this recipie, tasted the wort before pitching the yeast, looked very foamy and tasted soapy, have I messed up here only time will tell.
Came out really nice, would be greatly improved by fresh yeast as this was brewed with the cake from a previous beer.
Needed to be lighter in body.
Clarity however was stunning considering not lagered and fermented at ale temp.
Smoke flavour non existent so much greater volume of smoked wheat in next batch.
Also slight honey flavour noted, a hit of actual honey at the end of boil might work well. |

Notes: Accidentially left .5 gal star san in fermenter. To correct added 1 lb lactose to add some body and cover up strong grain flavor left presumably by the low pH produced by the star san. The correction resulted is a very sweet beer. To further correct the following beer was made to blend and reduce the sweetness.
