Notes: For sugar in grain bill, use barbados or some other semi-refined sugar.
Ferment through the primary and then transfer to 10 gallon secondary. Add 8 pounds of sour cherries and 4 pounds of sweet dark cherries. Both should be previously frozen and warmed to room temp. Add a blanket of CO2 if possible. Allow to sit on the beer for 2 to 8 weeks. Rack to a carboy and allow a couple of months to settle out before kegging or bottling. |

Notes: This is the Big Brew Day Recipe for 2022 - all grain version. Please note that grain bill is calculated for a brewhouse efficiency of 65%, adjust as needed. Mash at 151°F (66°C) for 75 minutes. Marcus recommends a 180-minute boil for the all-grain version of this recipe, but a 90-minute boil may be sufficient.
Dark Inception Imperial Porter was contributed by Marcus Baskerville of San Antonio’s Weathered Souls Brewing Co., and the leading force behind the Black Is Beautiful collaborative brewing project. This recipe was inspired by 2013 AHA Homebrewer of the Year Annie Johnson. Seeing an African American woman win Homebrewer of the Year provided Marcus with a bright hope for his future in homebrewing and inspired his love of brewing big dark beers. Dark Inception Imperial Porter is a thick-bodied, flavorful beer that features additions of raspberry, cacao, and vanilla, and is bursting with notes of toffee, caramel, coffee, chocolate, malt, liqueur, and fruit. It’s a perfect pairing with rich desserts or as a standalone finale for your evening.
Once you’ve pitched the yeast, you can create the vanilla bean tincture. Slice the two vanilla beans lengthwise, and place in a pint-sized canning jar. Add 1 cup (235 ml) of your preferred bourbon. Seal jar, set aside, and allow the beans to macerate (soak) for at least a week, shaking jar occasionally. The vanilla beans will be added to the fermenter 1 week before packaging (2 Tbsp of Pure Vanilla Extract can be substituted in place of the vanilla beans just before bottling or kegging).
Ferment at 64-72°F (18-22°C) for 14-21 days.
On 6th day of fermentation: Add 1½ tsp Yeast Nutrient, and 2 Liters of fruit puree to your fermenter. Gently swirl fermenter, if possible, to rouse yeast.
1 week before kegging or bottling: Pre-heat your oven to 300°F. Line a cookie sheet with foil or parchment paper and spread the cacao nibs out evenly in a single layer. Place sheet on middle rack and bake for 10-12 minutes until aroma is released from cacao. Remove, and allow to cool for a few minutes. Place vanilla beans and cacao nibs in muslin bag, add to fermenter, and infuse for 7 days before packaging (if using vanilla extract add it just before packaging).
I was only supposed to have 2.25 pounds of Weyermann Munich Malt, but I bought 3.5 of German Munich Malt. |

Sabor: Moderadamente tostado, sabor nítido dos cereais, com acidez moderada opcional e amargor de lúpulo de médio a alto. Final seco proveniente dos cereais tostados lembrando café. Pode apresentar um caráter de chocolate meio-amargo ou doce-amargo no paladar que persiste até o final. Notes: Mashing
In a 10-galloln insulated cooler, combine the crushed malts with 3 gallons plus 12 cups of 172°F water. The water should cool slightly when mixed with the grain. Hold the mash at 156°F for 20 minutes.
Add 2 gallons plus 2 cups of 184°F water. The mixture should come up to 165°F.
Lautering & Sparging
Lauter the mash. Once the liquid is lower than the level of the grain, begin to slowly sprinkle 3 gallons plus 1 cup of 168°F water over the grains to start the sparge. Continue sparging.
The Boil
Set the brew kettle of wort on top of a propane burner and add water to bring the wort level up to about 6 gallons plus 12 cups, if needed. Bring the wort to a rapid, rolling boil. As it begins to come to a boil, a layer of foam and scum may develop at the surface. Skim it off and discard. Once the wort is at a full boil, put a hops bag containing the Columbus hops in the kettle and set a timer for 90 minutes. Stir the wort frequently during the boil and be watchful to avoid boil-overs.
At 15 minutes before the end of the boil, stir in the Irish moss. At 10 minutes before the end of the boil, put a hops bag containing the 0.77 ounce of Ahtanum hops in the kettle. When the boiling time is over, turn off the heat and put a hops bag containing the remaining Ahtanum hops in the kettle. Cover the kettle and immediately begin cooling the wort as quickly as possible.
Pitching Yeast & Fermentation
Once the wort has cooled to 72°F, discard the spent hops and check the specific gravity of the wort with a hydrometer. The target starting gravity is 1.057 (14 Plato).
Transfer the wort to the primary fermentation bucket. Pitch the yeast (or prepare a yeast starter).
Allow the wort to ferment through primary and secondary fermentation at 72°F until it reaches a specific gravity of 1.014 (3.5 Plato).
