Notes: A Wisconsin staple, this English nut brown ale clone is likely more authentic with London ale yeast- but the Denny's favorite 50 yeast makes the mouthfeel more rich without being sweet.
For dry yeast, S04 or nottingham at 62-64 degrees would work.

and there is a guy on youtube who did an all grain no boil brown ale.
most use this to do berliner and other sour beers, or even the brown ale and stuff with low bitterness. but i think i can take out 1/5 or 1/4 of the wort from the mash after 30 mins mashing and boil it with some warrior to get a giant hop charge enough for this pale ale. using warrior it actually wont be that hard to get a good enough hop charge.
this recipe is for 5 gals although i probably should try a 2 gal recipe first...? if doing a 5 gal batch, not sure the effect of taking out 1 gallon of wort from the mash halfway through and boiling it would be...could be losing considerable gravity points? could adjust recipe for that...
ive been on a pilsner malt kick but probably safer to try this experiment with 2 row since the big worry about no boil is DMS which is more prevalent with pilsner malt...
i JUST brewed a cascade pale / ipa yesterday so maybe ill try a different hop for the flavoring.... |

| Notes: I always raise the temp a few degrees as fermentation begins to show signs of slowing. Along with oxygenation and a starter. Temp control is key. |

Notes: This used Sierra Nevada Pale Ale yeast harvested from a 12-pack and built-up over 3 fermentation sessions (to include the final starter) into a 1-quart starter. Substitute for WLP001 / US-05 / Wyeast 1056. Entire starter was poured into wort.
This has just a little bitterness, and a great grapefruit, hoppy taste and smell. Enjoy! |

Perhaps mash at 152? 149 seems really low.
Also, pitch a huge starter. |

| Notes: This beer hit 76-78 degrees for 2 days while in the fermenter. I kegged half of it after about a month in the fermenter and let the other half continue to ferment. Because initial keg was not fully fermented (1.018) the first bit was sweet and pretty cloudy. After a couple weeks in the keg it's cleared up and tastes great. I think the other half will taste much better since it will be fully attenuated. .....the other half never fully attenuated, looking back, I've realized that it's because I did about 2-3 brews using the BIAB method and that method causes fermentability issues because of the thin mash. Something to do with enzymes. I will brew this beer again but maybe simplify the grain bill. |
