| Notes: Start at 65 or 66degF. Let it free rise to 72 or 75degF. Let it sit for 2 weeks. First time I made this, I overboiled and started at 1.109, made it rise to slowly (was 1degF every 12 hours and stopped it at 72), stopped fermentation after 7 days (FG reading at this time was 1.020; this yeast probably needed some more time), and bottle conditioned with target 2.75volCO2. They were all gushers, but not bottles were harmed during conditioning of this beer. I used Harris Teeter spring water with no additions. Received an honorable mention in a local HB comp. Hops AA was low. Simply kept recipe at 1oz of hops and adjusted first and late additions such that I hit IBU in the 20s. |

Notes: I made this nano-batch years ago and just recently found the old notes buried in some luggage. When I look back on this, I *think* I built this recipe around some leftovers from other experiments; It almost looks as I was making a stout of all possible stouts. The brew (#184935) earned a "good" rating at one of the AHA sanctioned competitions, but I think the competition was a bit rigged. I already knew something about the judge, and he was a crook who kowtowed to the grandmaster of this particular brewing region. I'd like to be able to make this one again, and in a much larger quantity -- after I have refreshed my mind on the subject. [There's much more to this that what appears.] I used to really enjoy brewing at home and sharing the product until I butted heads with some of the more egotistical types.
BTW - I *did* place third in the Mixed Styles at one of the Queen of Beer competitions that took place during the mid 90s and another brew scored a 42/50 at a St. Pat's (Austin) competition, circa the same time. With an amber-isch ale and a robust porter. I entered the second contest under a fictitious man's name.
