Try to add the flaked oats on top of the mash don't mix in too much to avoid stuck mash
Could substitute a slightly larger amount of pale chocolate malt for the standard chocolate; about a quarter to half pound more.
Brewer's Friend recommends 3.49 gallons of water for sparge, but kettle volume was a bit low. Next time use at least 4 gallons.

I should point out that after roasting the peeled/cubed pumpkins, I mashed them using a potato masher. I think spread it all out on baking sheets and tempered in the oven at 152°F right before adding to the mash. This way, it didn't have to be considered in terms of mash temperature, only water absorption. You've gotta mash with the pumpkin, don't put it in the boil at all or you'll get pumpkin soup. I haven't tried this recipe exactly, but I brewed a VERY successful pumpkin ale and the pumpkin goes in the mash. You'll get that pumpkin flavor from the mash, trust me. |

| Notes: Mash the 3kg of Belgian Pils malt at 66°C for 1 hour. Lauter and sparge to a pre-boil volume of 15 liters, and boil for 90 minutes, following the hops schedule. Chill to 66°F (19°C), pitch the yeast, and ferment to completion. Rack to a secondary fermentor, then mix the honey with warm water and add to the secondary. Allow the secondary fermentation to complete and final gravity to stabilize before packaging. |
