Sean Lawson, owner of Lawson’s Finest Liquids, a small-batch brewery based in Warren, Vermont, shared this recipe for their Double Sunshine IPA, which is packed with juicy tropical fruit flavors and bright herbal aromas thanks to the abundance of U.S. grown hops.
ALL-GRAIN
Batch size: 5 gallons (19 liters)
OG: 1.074
FG: 1.013
IBUs: 100+
ABV: 8%
MALT/GRAIN BILL
8.5 lb (3.85 kg) 2-row pale ale malt
12 oz (340 g) Carapilsen malt
2.5 lb (1.1 kg) Vienna-style malt
1 lb (454 g) flaked oats
6 oz (170 g) Caramunich-type malt
HOPS & ADDITIONS SCHEDULE
0.75 oz (21 g) Columbus [14% AAU] at 60 minutes
1 oz (28 g) Citra [12.5% AAU] at 20 minutes
1 lb (454 g) corn sugar at 10 minutes
3 oz (85 g) Citra [12.5% AAU] at 5 minutes
3 oz (85 g) Citra [12.5% AAU] at knockout
3 oz (85 g) Citra [12.5% AAU] at dry hop
YEAST
Fermentis Safale US-05, Lallemand BRY-097, Wyeast 1056 (American Ale), or White Labs WLP001 (California Ale)
DIRECTIONS
Single infusion mash: Achieve a target mash of 152°F (67°C). Hold for 45 minutes, then raise to mash-out temperature and begin lauter phase.
Collect enough wort to boil 6.5 gallons (24.6 liters) and boil for 60 minutes, following the hops and additions schedule. After the boil is complete, begin a whirlpool in the kettle and let the knockout hops rest in the hot wort for at least 30 minutes before chilling.
Chill the wort rapidly to 68°F (20°C). Ferment at 68°F (20°C) for one week. Cool to 55°F (13°C) to settle the yeast. Dump the yeast from the bottom of the fermentor or rack to a clean, sanitized vessel. Add the dry hops and let the beer sit for an additional four to seven days at 55–57°F (13°C).
EXTRACT VERSION
Replace the 2-row and Carapilsen malts with 6 pounds (2.7 kg) of light liquid malt extract. Mix the crushed Vienna-style malt, flaked oats, and Caramunich-type malt into 2 gallons (7.6 liters) of water to achieve a temperature of 152°F (67°C). Hold at this temperature for 45 minutes.
Rinse the grains with 2.5 quarts (2.6 liters) of hot water, add the liquid extract, and bring to boil. Top off the kettle to 6.5 gallons (24.6 liters). Boil for 60 minutes, following the hops schedule and adding 1.5 lb (680 g) of corn sugar with 10 minutes left in the boil. Continue as directed above.

Notes: Brewed 8/31/14. Strike water was 172F and I hit 154F. Recirculated 2.5gal. It was still a bit high so I had to add about a quart of cold water and then a quart of hot water I hit 150F. Mash pH was 5.2 which is a bit lower than predicted, was supposed to be about 5.5 but should be fine. Hit 78% in kettle efficiency which might be a bit low, not sure. The mill was a bit difficult to use and I had adjusted the crush so maybe that was a factor. Everything went pretty well. Hit the predicted numbers and volume on the nose. Couldn't get it chilled past about 76F so I had to ice bath it for a minute before pitching but I don't think that was a big deal. Temp ended up being about 66/67F at pitching. 9/1 beer in the morining was sitting at about 62F. Evening time it was up to 66F. 9/2 I iced it down a bit last night and the temp was still at 66F this morning. Chilled it during the middle of the day and by night it was at 65F. 9/3 I chilled it a bit last night and it was 66F in the morning. By evening it had raised to about 68F. 9/4 it held at 68F but I decided to cool it a little bit and let it slowly rise throughout the day. By evening it was about 70F. 9/5 I took the beer out of the swamp bath and it was sitting at about 72F, might get a bit hotter as the ambient is around 75F. Dry hopped and took a gravity reading on 9/19/14. Racked to keg 9/26/14. Beer is quite tasty. Not as hop forward as I thought it would be, more "balanced" but for sure hoppy. Might be due to using older hops that there is a bit of a lack of aroma. |

My boil volume was 29 litres as my boiling pan is large and I loose a lot of water to evaporation. Final volume in fermenter was 18 litres.
Two temp mash rather than normal one temp mash
Specific gravity below target at the end of mash so added some brown sugar @100grams and dark spray malt 200grams to boost sugar levels.
After boil managed 1.052
Dry hopped on day 7 of fermentation
It is dry and hoppy with a interesting flavour worth a try. |

Notes: Straight forward recipe for a quick brew day. This is a hearty and well rounded ale that is my house/go to beer!
Steep grains in muslin bag in 5.2 gals 155F water for 15mins. Remove bag and bring to a boil.
Add extract and return to boil then add hop pellets(also in muslin bag) and boil for 20mins.
Add irish moss last five minutes.
Chill in your favorite fashion and pitch at 68F.
Ferment cool - room temp 5-7 days. Rack to secondary and allow to rest 2 weeks. if possible 2nd week refrigerated or cellar temp to clarify.
I keg and force carbonate...then enjoy!
The ingredients are strong and robust and the short boil renders a complex ale with a malty, hoppy nose and clean fresh flavor.
