Notes: Mashed at 67 degrees Celcius, 2/3rds added at first with all salt and 1ml lactic acid. After 30 min the remaining 1/3rds water without salts but 1ml lactic acid was added with temperature to get mash up to 67 degree again. Had just lost 1-2 degrees since insulated with blankets. Mashed in total for about 80 minutes. No sparge.
First wort hopping with all the 60min hops. Forgot to use irish moss in boil. Added yeast nutrient as wort was cooling in water bath, two different pots so cooling went fast. Hops strained away to fermenter but lots of trub went into fermenter. Measured 1.062 OG @30 degrees C, temperature corrected and water added for OG 1.056.
Fermented until primary almost complete gravity at 1.012, at 16 degree Celcius, green beer was then at 18 degree Celcius. Then fermented for a week at 21 degrees Celcius, reaching 1.010.
Dryhopped in bag for 3 days. Hops removed, 1/2 tsp gelatin in hot water added, and cold crashed at 0-5 Degrees celcius for a week. To be dry hopped again before bottling. |

Notes: All grains and pumpkin go in the mash. If the pumpkin is in the boil you will most likely lose a gallon of water, and have a tough time straining the pumpkin out.
If you really want to put the pumpkin into the boil then you should use a grain bag or filter the wort before racking to your primary.
The pumpkin should be cleaned and cut into small cubes and baked for 45 mins at 350, then mashed and coated with honey. Then baked for another 45 mins at 350. Let it cool to 154 and add to mash.
For the vanilla bean vodka solution, two vanilla beans are cut in half. The seeds and goodies are then scraped into 4oz of vodka. Let the vodka sit for two weeks. |

Notes: I'll use lots of ~ and round to the nearest 1/2 qt - that's close enough for me. I'll also ignore MLT dead space and cooling losses, but these could add another 1-2 qts to your sparge water needed.

Your final volume will be ~ 85% of your volume into the boiler.
Your volume into the boiler will be your strike water - 0.12 gal/lb of grain + sparge water.
You strike with 1.25 qts/lb = 12.5 qts. You lose ~ 1.2 gal to grain absorbtion. You've got ~ 7.5 qts left.
Suppose you want 5.5 gals into the fermenter. Then you need to have 6.5 gals (26 qts) into the boil kettle, because you'll lose ~ 1 gal in evaporation.
Now you're ready to figure your sparge water.
Sparge water = volume into kettle - volume out of mash = 26 qts - 7.5 qts = 18.5 qts =~ 4.5 gals |

| Notes: Cold steeped the pale chocolate malt overnight. Pitched half a pack of mangrove jack hefe yeast 2 65 and let it free rise at ambient temps of 70. Came out great. |
