Maximize thiol precursors:
- 3MH/3SH-precursor rich hops: Calypso, CZ Saaz, Hallertau Perle, Simcoe, Nugget, Cascade

- Mash hopping to improve enzymatic liberation of precursors
Optimize 4MMP + 3MH/3SH thiol precursor release by using microbes that produce β-lyase in beer:
- VIN 7 and VIN 13 (wine yeast)
- Derivatives of London Ale III (wyeast) and British Ale V (omega), such as OYL-402 Cosmic Punch
- Torulaspora delbrueckii
- Lactobacillus plantarum
- certain Brett strains have high betaglucosidase enzyme
Oxygenate wort to promote conversion, but reduce oxygen during and post-fermentation
No nitrogen-based nutrient additions (N reduces conversions)
Dry hop (20degC) prior to fermentation. Dry hop during lagering at 30 days (optional).
Aged high-AA hops like Apollo or Bravo for hop-derived fatty acids (convert to esters)
Add high-free-geraniol hops in WP & DH: Centennial hops, Coriander spice
Add high "survivables" hops in whirlpool (<185F) to compliment biotransformation: Idaho 7, Mosaic, Bravo, Citra, Millenium, Mount Hood, Euaknot, and Simcoe

Notes: 2.5 gallons unpasteurized apple cider poured into 3 gallon carboy. half gallon of peach puree added along with enough cane sugar or brown sugar to bring mixture to 1.050%.
Crushed campden tablets added and mixed after 24 hours pitch yeast
2 weeks primary @ 65 to 70 degrees
1 week secondary,
rack to keg and condition at 50

Mash 8 Gallons
Gypsum 3.2 grams
Calcium Chloride 2 grams
Epsom salt 3.2 grams
Lactic acid 2.4 ML
Mash temp 149
Heat water to 154F
Pour in grain (not sugar) , let mash for 60 minutes, stir every 10-15 minutes.
Pull grain bag out, let all liquid fall into kettle, squeeze bag if necessary
bring beer to boil.
Once boiling (hot break) boil for 60 minutes.
at 60 mins add .45 oz apollo hops
at 15 minutes left, turn burner off and add 1 lb of sugar. make sure the burner is off or it will scorch, once it is dissolved , put your chiller in to sterilize it and turn burner back on.
You can also add whirlfloc and yeast nutrient at this time
Boil for 15 more minutes.
Cut burner off at add saaz hops.
Turn chiller on and chill beer as far as it will go.
make sure everything is sanitized at this time.
Transfer into sanitized fermentation bucket and put in your fermenting fridge
Pitch 2 packs of belle saison yeast when beer is at ferm temp. 68 degrees.
Cover airlock with santiized aluminum foil. don't add water. after 4 days remove and add water to airlock for another week.
