Notes: Ferment for 18 days at 66 degrees. Diecytl rest at 170 after high krausen subsides. Dry hop for 14 days then crash to 34 degrees, add biotin and rack to keg.
*UPDATE: made this twice now, and it is officially my go-to standard IPA. Great body, hops add a citrus and mild herbiness, nice malt sweetness from the crystal. |

Notes: DIRECTIONS
Mill the grains and mash at 152°F (67°C) for 30 minutes, or until conversion is complete. Recirculate until the runnings are free of particles, then run off into the kettle atop the first-wort hops. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate. Boil for 40 minutes. After the boil, do a whirlpool step: Cool the wort to 160–165°F (71–74°C), recirculate or stir to create a vortex, and add the whirlpool hops; steep for 20 minutes. Chill the wort to 67°F (19°C), aerate, and pitch the yeast. Ferment at 67°F (19°C). Once the beer is more than 50 percent attenuated (i.e., below 1.038), raise the temperature to about 70°F (21°C) until fermentation is complete. Once the beer has passed a VDK test (see “Hunting for Diacetyl,” beerandbrewing.com), lower the temperature to 60°F (16°C), optionally harvest the yeast, and add the dry hops. After 3–4 days, crash, package, and carbonate to about 2.4 volumes of CO2.

Peaches should be halved and roasted on low over a charcoal grill for 1.5 - 2 hours, or until significant caramelization from Maillard reaction. Use foil to shield from being seared outright. Once off the grill, smash with a sanitized masher in a sanitized bowl, cover with sanitized foil, and chill. Add to Secondary when ready. |

Notes: To brew this saison homebrew recipe, steep the milled roasted barley in 1 quart (0.95 L) cold water overnight. Filter through a sieve lined with a coffee filter. Mash at 159°F (71°C) for 60 minutes. Add the roasted barley extract to the wort at the start of the boil. Perform a 90 minute boil.
Chill to 68°F (20°C), transfer to a fermenter and pitch White Labs 670 yeast. If this blend is not available, pitch a Belgian saison strain (White Labs 565 or Wyeast 3724) along with Brettanomyces bruxellensis (Wyeast 5112 or White Labs 650). Hold fermentation close to 75°F (24°C).
After the initial wave of fermentation is complete, transfer to secondary with 1 oz (28 g) red wine soaked oak cubes and 25 oz (907 g) dried Zante currants. Store beer between 60-80°F (16-27°C) until the gravity is stable from one month to the next (a minimum of six months). Bottle or keg and carbonate to 2.4 volumes of CO2.
