Notes: First Brewed 04/2007
In 2006 James and Martin hijacked a beer dinner run by Michael Jackson, the acclaimed beer and whisky writer, and convinced him to taste one of their home brews. This was a defining moment in BrewDog prehistory, and that beer was the first incarnation of the ubiquitous Paradox. Aged in a variety of casks over the years, Paradox is dark, decadent and encapsulating. Can be enjoyed fresh; phenomenal when aged. The beauty of this beer is in how brilliantly it lends itself to infusing or ageing. Experiment with different additions when the beer is ageing, taste it regularly to gauge its progress, and make sure you package it at its peak.

Notes: This is a single-hopped double IPA. (It's pretty much a SMASH ale.) I love single-hopped IPAs where you can really get the character of the hop - and Challenger is an excellent dual-purpose hop. It's a big beer, obviously, and after many, many brews and experimentation now, it's become a neighborhood favorite.
I cask-condition it, and serve it through an Angram engine at about 55 degrees F cellar temp.
The HMS Challenger is one of my best beers. (And when my buds come by expecting to quaff four or five 20 oz. pints, they only try once!)
All the malt carries the bitterness very well. There is some residual sweetness on the palate, with a creamy mouth-feel from service through the beer engine. Only a relatively small amount of crystal is used, (it is an IPA after all), with just a touch of wheat for head retention. |

Notes: Mash at 149° F (65° C).
With the low mash temperature, you may need to
lengthen the rest time to 90 minutes to get full
conversion. Also increase the pre-boil volume as
needed to allow a 90-minute boil, which will help
reduce DMS in the beer. |

Notes: 24 hours before:
1) lacto starter with 4 tsp yogurt in 1L 1.040 wort (http://www.milkthefunk.com/wiki/Alternative_Bacteria_Sources)
2) prep brewing water
Collect 5 gallons run-off in same volume pot. Adjust pH to ~4.5 with 15 mL lactic acid. Pasteurize wort (10 min at 170) and cool to 110. Pitch lactobacillus and kettle sour with target pH 3.3 (took about 20 hours, much faster with teh starter).
Boil for 10 minutes. Cool and pitch wyeast kölsch with starter (approx. 130B cells).
Once finished, dry hop 2.5 gallons and add rhubarb to 2 gallons (chop 2 lbs, cook down and simmer for 10 minutes). |
