Good temperature control critical for clean Koelsch-like flavor.
Have also fermented as low as 58F with good results.
Can also add 0.5# white wheat with good results. |

Notes: Actual yeast is Omega Labs Jovaru strain (see their website for the original recipe for this beer), but not in database yet. Lithuanian farmhouse yeast, so similar to a Norwegian Kveik. Recipe calls for Hallertau Blanc hops, but my LHBS didn’t have, so subbed in Nelson Sauvin.
Use Indian coriander, and crush lightly (not to a powder). Their recipe calls for dried sweet orange peel, but I’m using dried bitter orange peel from a tree in my yard. |

Notes: Water - very soft, proud of their use of Cornish water
Malt - A lot of Simpsons Pale Malt, Crystal 120'l and 1000'l black malt around the place
Mashing - Mash low! 64c tops was what i recall he said, he also commented that my 67c Pale ale mash temp was "too f*ing high!"
Hops - Hops mostly added late on, he said their three main hops were Aurora, Northdown and Hallertau which they balance depending on harvest etc, but there was lots of Perle around also.
Yeast - Its the old Morrells Brewery yeast, they are the sole users/holders of it now. I think he said it was a whitbread derivative, which makes sense as he said it was highly flocculent.
Fermentation - hot! 25c was what he told me, which makes sense why the beer tastes so dam fruity! 5 days then 7 conditioning, obviously thats done in huge volumes so not much help. But they do use square fermenters (like Black sheep) and condition under pressure. |

Notes: Decided to use Coopers Wheat beer kit + Wheat DME, and add a little Hallertauer (classic Bavarian weissbier hops) both for aroma and bitter (10 and 60 min). Since the kit already has some hops, I'll just use a tiny bit (10-20g in ~10-15 liters wort =~3 AAU) to be on the safe side, yet be able to try boiling and adding hops. No dry hopping.
Make sure to do a clean racking to bottling bucket, so there's only some yeast in the bottle, like a real hefeweizen.
Made with 500g LDME and 300g Dextrose, (like package suggests) 150g malted wheat steeped for 20min, and 10g Saaz dry in the fermentor from day 4 til day 10. Used the kit yeast at 19-21'C. Turned out quite well after 3 weeks with a very pale body and a nicely white, fluffy head. The body isn't overly light, and the taste is delicate and well balanced with a nice impart from the Saaz. Perfect for hot summer days. Only other comment is that it would benefit from a proper wheat yeast such as WB-06. I'd give this a no-joking 5-star rating.
Another user used wyeast 3068 (for real German tasting weissen, not American hefeweize)
From: http://www.ratebeerkits.com/items/view/coopers-wheat-beer
Coopers site suggests using kit + 1 kg of Coopers Wheat malt and WB-06 / Munich yeast; to make 'Hefeweizen'.

For those interested: poster Les posted this from another board from Down Under. It's close enough that I'm going to give this a whirl:
(6 gal batch)
~2kg Wheat Dry Extract (62.5%)
~1.1 Light Dry Extract (37.5%)
12 grams Tettnang (90') 6.4 IBU
9 g Pearle (90') 8.6 IBU
7 g Tettnang (45') 3.4 IBU
7 g Tettnang (15') 1.0 IBU
1 pkg Weihenstephan Wyeast #3068)
Beer Profile Estimated Original Gravity: 1.051 SG (1.044-1.052 SG)
Estimated Final Gravity: 1.010 SG (1.010-1.014 SG)
Estimated Color: 13.6 EBC (3.9-15.8 EBC)
Bitterness: 19.3 IBU (8.0-15.0 IBU)
Estimated Alcohol by Volume: 5.3 % (4.3-5.6 %) Actual Alcohol by Volume: 5.3 %
Actual Calories: 475 cal/l
Start with ~2-1/2 gallons of water in the pot and bring to the boil. Remove from heat and add 2.2# of the DME (wheat or barley, shouldn't make a difference), and dissolve. Return to the heat to boil (watch for boilovers!) Add the remaining DME (off the heat) in the last 5 or 10 minutes of the boil.
The advantage of the DME limited quantity boil, is that you can cool in a laundry sink or bathtub of cold water.
Ferment with 30% headspace at or below 68 deg F; bottle as soon as fermentation is complete |

Citra Pale Ale Recipe
Batch size: 6 gallons
Original Gravity: 1.056
Final Gravity: 1.011
ABV: 5.9%
IBU: 35
Malt
11 lbs. 2-Row
.75 lbs Crystal 40L
.5 lbs CaraPils
Hops
Citra AA% = 12
Cascade AA% = 6
.5 oz Citra (60 min)
.5 oz Citra (15 min)
.5 oz Cascade (15 min)
.5 oz Citra (0 min)
.5 oz Cascade (0 min)
.5 oz Citra (dry hop)
1 oz Cascade (dry hop)
Yeast
WLP001 California Ale yeast with 2 liter yeast starter.
Extract Option:
Replace the 2-Row with 8.25 lbs light liquid malt extract. Add half of the extract in the beginning and half with 15 minutes left in the boil to preserve the lighter color of this beer.
Process
Mash at 152F. Cool to 66F and pitch yeast. Ferment at 68F until fermentation stops, then transfer to secondary and dry hop for 7 days. Carbonate to 2.2 volumes.
Notes
The next time I brew this recipe, I will increase the mash temperature to 155F to add a bit more body. This comes from the recommendation of BJCP judge Marty Nachel as seen in the above linked video. He says that it will add some needed malt sweetness and balance to the beer by making it a less fermentable wort. It’s a good idea and I’m excited to see how it works out.
You could also play around with the dry hopping proportions. I think 1.5 oz is a good number, but you could try flipping it around and using more citra than cascade. The good thing about this recipe is that you can buy 2 oz of both citra and cascade and be set. Hey, I like convenience, and it worked.
I would love to hear if anyone brews this recipe, along with any tweaks they made to the recipe.
Enjoy! |
