Notes: I've brewed this a few times now and am always happy with the results
Makes a great 'cheating' baltic porter with ale yeast, so no need to use lager yeast and temps
Needs to be matured for a few months. I normally leave it form 3 months and you can really notice the difference
Also takes extra flavors well. A bottling time I sometimes add 50ml of a good vanilla essence |

Notes: First try at all grain BIAB and I am a little disappointed in the 44% efficiency I hit. I started with 6.5 gallons of water in my kettle with a plan to sparge with 1 additional gallon. Definitely seems like I had too much grain, and with the addition of .5 lb. of rolled oats, the grain turned into a big ball of goo.
I dropped the grain bag in at 165 degrees and, to my horror, watched the water temp drop to blow 140. I had temperature readings all over the place, depending on where I stuck the thermometer. The water could not adequately circulate through the grains. I stirred it as much as I could before closing the lid and letting it sit for an hour.
Lessons learned:
16 lbs of grain is too much, unless you have some way to vorlauf.
Rolled oats should be reserved to smaller grain bills

Quick chilled the first bottle tonight - 8 days after bottling and the carbonation is almost perfect. The beer turned out excellent! Fruity aroma with hints of peach, just the right amount of bitterness to complement the malts and up front hops. Could not be happier with this final product! Cheers! |

Notes: Use Orange Blossom Honey. Orange Rind is to add to the zest of the orange flavor -- let it sit in secondary for a very short time. Ultimate replacement is Bergamot Oranges used in perfumery.
Oranges: Zest on the colorful orange portion of the rind. Lightly crush the zest with a knife, or place into a small bag and into the freezer for 24 hours. Toss the zest into a sterilized container with grain alcohol. Let sit for 5 days, and then toss the entirety of the container into the racked beer. Best if tossed into beer at bottling for best flavor longevity.
Rack for clarity and flavor for 6 months. |
