Notes: This beer is based on Greg Noonan's 1850 ale in the book "Scottish Ales". The amber malt used is from John Palmer's "How to Brew" pg. 246. We used wet Golden Promise malt toasted for 1.5 hours. The mash tun runoff was introduced into a hot kettle and simmered for 1.5 hours to encourage carmelization. Bittering hops were put into the kettle for 45 min. No other hops or adjuncts are used, specify, no smoke or black/burnt malt.
A 4 quart starter with about 1.3 m cells /ml/o Plato was used. Fermented in open crocks, essentially as two batches of 5.5 gallons. Transferred to, when the yeast dropped, a pair of closed secondary fermentors. Held in the secondaries at 50 F until they stopped,bubbling, then the temp was dropped to 34 F and held for about 4 weeks.
Serve at 50 F with 2 volumes of CO2. |

Notes: 14 days - In a separate container, split and scrape 6 vanilla beans and put in the end of a muslin bag. Add 6 oz of Woodford Reserve and soak vanilla beans and muslin bag in Woodford Reserve for 1 week prior to adding to secondary.
21 days - 8 oz Mackinac Island Fudge coffee in 12 oz Woodford Reserve for about 10 min (to sanitize coffee and to add flavor), then add 4 cups of distilled water to cold brew for 24 hours.
21 days - In a muslin bag, add 6 oz Crown Maple Syrup (bourbon flavor) to 1.5 oz American Oak chips to 4 oz of Woodford Reserve (to sanitize) for 24 hours

Notes: Found a forum discussing the OG recipe I'm replacing the hops with some american ones however just what I have in the freezer becauseeeeeeeee reasons.

The amounts of grains we used are roughly:
50% 2 row pale malt. (The first couple of batches were made with Great Western)
40% white wheat malt
10% flaked oats.
Hallertauer Mittelfrueh hops were added for a 90 minute boil. Bittering should be around 17.5 IBU. Only one addition.
Blue Moon has always used pre-ground corriander and Valencia orange peel. Keith did not want the bitterness of Curacao oranges. He preferred the sweetness of the ground Valencia.
Try 1.25 tsp of ground corriander added to the kettle 10 minutes before the end of boil. This is for a 5-6 gallon batch.
Add 0.33tsp of ground Valencia orange peel 5 minutes before the end of boil.
The Chico strain would work well in this recipe. You want a neutral taste from the yeast. Keith has said that the flavors that should come through are the orange peel and corriander, not the yeast.
Be careful when lautering. I have made this recipe and some variations of it in three different pubs, with three different systems. I usually have trouble and end up sticking the mash. Run off very slowly. |

Add non-roasted malts to mash, let saccharification occur, then drain off 2 gallons of wort to separate pot. Add roasted malts to mash and sparge if necessary. Boil the drained wort until only 1 gallon remains and add to boil.

Attenuation is based on data fed to Brewersfriend ABV calculator for Pelmo mead.
Remember 50 raisins and 5 copper coins.
Boil the water with 1/2 honey, add hops.
Chill and add second half of honey, stir, dissolve and then pitch WLP001 at around 30C (2 tablespoons).
Add yeast nutrient (4g from Hop and Grain) and aerate for first 5 days.
Primary for 3/4 weeks, rack and crash for 1/2 then bottle with 2 carb drops (total 24) each bottle.
Condition for 1 month at ambient temp. |

Notes: Yeast: Vermont Ale Yeast (2 Vials) ; purchased from Yeast Bay $8.50 per vial + $8.50 shipping ($25.50 total)
Mash at 155F for 40 minutes. Sparge enough to collect roughly 7.5 gallons in your kettle to achieve 6.5 gallons at knockout. Boil for 75 minutes, adding 1.5 oz. Simcoe @ 30 min. After knockout add 1 oz. each Cascade, Apollo, and Simcoe. Whirlpool with pump or by stirring for a minute and letting it spin down and settle. After 30 minutes, reduce wort temperature to 170F and add 1 oz. each Centennial, Simcoe, and Columbus. Whirlpool again. After 15 more minutes begin final cooling process. The goal is to get 5.5 gallons into the fermenter to account for loss of wort during dry hopping.
Pitch healthy dose of yeast @ 65F. After FG has been achieved add a clarifying agent such as polycar. Allow 3 days for clarifying agent to work, then add first set of dry hops to primary fermenter. After 7 days rack beer off dry hops & yeast cake either into a keg or secondary vessel. Try to purge with CO2 if possible. Add second round of dry hops and wait 5 days. Bottle or begin carbonation process. |
