Notes: First Brewed 2005
In 2006 James and Martin hijacked a beer dinner run by Michael Jackson, the acclaimed beer and whisky writer, and convinced him to taste one of their home brews. This was a defining moment in BrewDog prehistory, and that beer was the first incarnation of the ubiquitous Paradox. Aged in a variety of casks over the years, Paradox is dark, decadent and encapsulating. Can be enjoyed fresh; phenomenal when aged. The beauty of this beer is in how brilliantly it lends itself to infusing or ageing. Experiment with different additions when the beer is ageing, taste it regularly to gauge its progress, and make sure you package it at its peak.

1.5# Wheat DME
1.5# Sugar
1 oz. Columbus @60 (cascade instead)
1 oz. Citra @15
2 oz. Citra @FO
2 oz. Citra @HS = 168F (actually was 60C, not 168, and just dropped in, did not hopstand/whirlpool whatever)
1 oz. Cascade @HS = 168F (actually was 60C, not 168, and just dropped in, did not hopstand/whirlpool whatever)
Dry Hop #1: 1 oz Citra + 2 oz Nelson (cascade instead) -- took place on 8/13 @
Dry Hop #2: 1 oz Citra + 2 oz Nelson (cascade instead)
estOG: 1.074
estFG: 1.010
estABV: 8.4%
boiled as usual, all pellets, took approximately one hour and 17 mins to cool.
poured 1/4 into fermentor from ~5ft height like usual. pitched at ~80F. transfered the remaining. attempted to aerate but the stone kept floating so I gave up.
brix was ~21 @ 28C on 8/5 @ ~6pm
dry hop 1 at 4pm on 8/13
dry hop 2 at 1pm on 8/16
brix was ~4 @ 24C on 8/19. |

| Notes: Following Briess's recommended dough in and sparging regiment. 10 quarts to mash in with and 22 quarts to sparge with, only collect the first 6 gallons. But in my system I will collect closer to 7.5 gallons to get my desired volume. I also will add 10% more grain for a final boil volume of 5.5 gallons. |

| Notes: 14 lbs of Apple Juice in the recipe gets to the actual OG (since no way to add volume of juices) - actual recipe is 1.5 gallons Apple Juice and 0.5 gallon Cranberry juice. Add pectic enzyme (for clarity) and wine tannin (for structure/mouthfeel/bitterness, since only using store-bought sweet apple juice. Can also add Acid blend as needed to taste) while pouring juices into fermentor to mix (shake to mix and aerate, as well). Use kveik and ferment at room temp (or hotter if you like!). After fermentation, back-sweeten after stabilizing (with K sorbate and Campden tablets) with 1.5 cans apple juice concentrate. |
