| Notes: Separate mango pulp from skin and seeds. (Approximately 16 oz.) Puree with whole habanero pepper. Heat puree to 180 Deg. F, cool and add to secondary fermentation vessel. After primary fermentation is almost complete transfer to secondary on top of mango puree. After one week add mango juice to to serving keg and finished beer through a sediment filter. |

Notes: Souring:
Goodbelly Shots: Use 6 (3 Lemon Ginger & 3 Oat) + 6 pills to get to 16 oz of liquid & 200B cells of Lacto.
Flavoring:
Ginger Tincture: Take 1-2" of Ginger, peel, cut into slices & soak in 1 oz Vodka.
Vanilla Tincture: Take 1 Vanilla Bean, cut length wise, scrape seeds & cut the outside into little pieces, and put everything in a mason jar with 1 oz Vodka
After 7 day Primary, rack beer onto Cranberries, Orange Zest & Ginger Tincture.
Parfait Variation:
After 7 day Secondary, rack 1.5g onto 4 oz Lactose & Vanilla Tincture & age for 3-5 days.

Notes: Ensured main mash was 156* before pulling decoction. Beer was perfect from Day 40-60 then really seemed to dry out in the keg. Will consider slightly decreasing time at 146* and increasing time at 156* with this grist. Perhaps shift 15 mins of the time to 156*
There was some room for more bitterness (as a few judges commented) but I think it is just about perfect. Normally use Magnum for bittering but I had some Liberty to use up this time.
Hershbrucker aromatics are great. Way better than Mittelfruh.

| Notes: Mash and sparge normally to collect 6 gallons of wort. bring to 180F for 15 minutes to pasteurize. cool to 100F and transfer into 10 gallon cooler. Pitch 1 liter starter of OYL 605 and wrap cooler in blanket. Check pH after 12 hours for pH level. CHeck periodically until pH approximately 3.5. Proceed with boil. |
