Notes: Batch 2017-10
Changes since v1.2. Changed the malt bill to add a bit more body. Added 5% Carapils, 5% Wheat malt and 4% dextrose to up the booze and dry it out. Upped the OG from 1.058 to 1.063 to make it more IPA than APA. Probably unnecessarily complex (first time Ive used more than 2/3 malts in a pale for a long time), but very similar to Jacobs DIPA malt bill which was fucking awesome.
Thursday 4th May 2017 - 1.75L starter of WY1318 on striplate (this will be generation 2 / first repitch).
Sunday 7th March - Mashed in at 64C. Stirred after 15 mins, mash temp 63.5C. Stirred again after 30 mins, 63.5C so turned on the heat. Heating up to 67C and then turned off the heat. Mash pH = 5.36.
Preboil OG = 1.054. pH = 5.32. Total preboil volume approx 27L.
Added half the whirlpool hops at FO and they had about 10 mins at 95C+ before I chilled to 75C for the second half of hops. They also got about 10 mins at 70C+ before chilling to pitching temp.
I forgot to add the glucose during the boil so will add it a couple of days into fermentation.
24L at 1.063!
Monday 15th May 2017 - I had intended on DH in primary and then in keg but when I attempted to open in primary I got a beer shower, the blow off tube connected to the keg had clogged and the beer was already under pressure. So in the end I decided to go straight to the DH keg.
Took a sample to taste and measure FG. FG = 1.018. 6.0% ABV. Should I run a blend of yeasts in future? tasted very hoppy considering no DH yet. Very Columbus dank.
Tranferred into DH keg onto 100g DH. Went with less hops and more fruity varieties than originally intended, as the beer already tasted plenty dank so I didnt think it needed any more columbus.
Wed 17th May 2017 - Had been periodically agitating the DH by shaking and bubbling CO2. Opened the keg and added a 2nd DH of just Mosaic. In total the DH is about 9 g/L with a little over 2/3 Mosaic. Plan is to crash and transfer to serving keg on Friday. |

DIRECTIONS
Mill the grains and mash at 145°F (63°C) for 60 minutes, adding enzymes at the start of the mash. Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate. Boil for 60 minutes, adding hops, nutrient, and finings according to the schedule. After the boil, chill to about 52°F (11°C), aerate the wort, and pitch the yeast. Ferment at 58°F (14°C) until complete. Crash, package, and carbonate to 2.7 volumes.
BREWERS NOTES
Mash & Enzymes: When adding the enzymes, first check that the temperature of your mash is not above target; mix thoroughly to ensure proper distribution. Make sure that the malted corn is well milled, without chunks, for optimal enzyme conversion.
Fermentation: Keep an eye on temperature during fermentation. If the fermentation stalls or takes longer than 48 hours to begin, raise the temperature or remove the vessel from temperature control and allow it to ferment at room temperature. The W-34/70 is stable and can ferment up to 74°F (23°C) without off-flavors. |

Notes: This is my first foray into sour beers. On the technique:
Based on advice from the interwebs, we're going to sour this in the "kettle", which in our case will be into a plastic carboy specifically reserved for sours, then pour back into the kettle. So, the order of operations is:
1.) heat up strike water and mash as usual.
2.) Sparge and collect 6.25 gallons of wort in kettle
3.) Boil for 10 - 15 minutes to pasteurize - NO HOPS
4.) Cool to 95F, and bring ph down to 4.5 with phosphoric acid; collect into carboy
5.) Inoculate with OYL-605, the lacto culture, and let sit for 48 hours at ~93F. Should drop to 3.5 ph; MONITOR
6.) When terminal pH hit, POUR (Don't rack!) back into kettle; bring to boil
7.) proceed as normal with boil, hops schedule, primary ferment until complete (10 - 14 days?), then condition for two weeks.
For next experiment, consider adding brett along somewhere between primary and secondary to make Joey Chestnut even funkier... |

Notes: The pumpkin needs to be specially prepared for the mash. Four pie pumpkins with a total of about 9 lbs (4.1 kg) were halved and cleaned of seeds (roast your seeds for a bonus brew day snack!).
The now exposed meat of the pumpkin was rubbed with brown sugar and placed meat-side down on a cookie sheet.
Bake at 300°F (148.9°C) for a little over an hour or until the pumpkins have visibly finished “falling.”
Scoop out the pulp and mash up if necessary, then add to the second step of the mash as noted below.
Mash in grains for a protein rest at 122°F (50°C).
After 30 minutes, raise temperature to 155°F **did144** (68.3°C), add the prepared pumpkin and hold for 60 minutes.
Mash out at 165°F (73.9°C) for 10 minutes.
After completing the mash, proceed to boil following the schedule as noted under the ingredients.
Ferment at 68°F (20°C) and carbonate after approximately four weeks. |
