I think the yeast and softness of the water is very important. Peroni also has insane head retention, carapils seems key.
Scale to match your usual efficiency. Peroni is 4.7% ABV

Peroni Nastro Azzurro is 5.1% in alcohol by volume.
INGREDIENTI
Water: The water used is tasted by the master brewer daily to ensure high quality and softness.
Malted barley: The time of year affects the characteristics of barley. Peroni Nastro Azzurro uses only spring-planted barley.
Maize: One quarter Nostrano Dellisola maize was added to the original recipe, creating a unique blend of three quarters barley and one quarter Italian maize.
Hops: Hops do not naturally grow in Italy. The hops of Saaz-Saaz and Hallertau Magnum are used by Peroni Nastro Azzurro

Mash Temperature:
At lower temperatures — between 160–170° F — pectins from the fruit will not be extracted but the heat will still kill any microorganisms on the fruit. The fruit itself will cool down the wort, so you may need to heat the wort to keep it above 160° F while you are steeping. |

Notes: Remove 3 quarts of the mash for the decoction, including a good mixture of both the grain and liquid. Add the Hallertauer hops to mixture and boil in a separate pot for 15 minutes. Stir frequently, and as foam rises to the top, skim and discard.

Add the entire decoction back into the mash. In a separate container, heat 3.7 gallons of water to 185°F.

After about 60 total minutes of mashing, mash-out by carefully pouring the 185°F water into the mash, stirring to equalize temperature to about 170°F.
6.
Slowly raise grain bag out of the liquid, allowing wort to drain from the grain. Hold grain bag above the kettle for 5 to 10 minutes as the wort drains.
7.
DO NOT BOIL. Cool the wort to under 80°F and transfer to a sanitized fermentation vessel. |
