Notes: 1.25L starter. Pitch at 64F, keep cool for a couple of days then allow to ramp up on its own.
7 hour boil!
No water additions except lactic acid and Campden tablet - the minerals in the water will concentrate over the 7-hour boil, so I don't want to add anything extra.
Mash with 6 gallons, then boil for an hour before topping up with 1-2 gallons of separately boiled, filtered water to replace the boil-off. Keeping the overall boil volume lower should help to use less propane, and might increase the rate at which the wort changes.
Need to make sure that:
1) the volume never gets too low and allows the wort to scorch
2) the final volume is reasonably close to the target
3) the propane doesn't run out before the boil is done |

Our most involved beer, Tokyo* is an Imperial Stout brewed with copious amounts of specialty malts, jasmine and cranberries, dry-hopped with a bucket-load of our favourite hops and then carefully aged on toasted French oak chips. It’s all about moderation. Everything in moderation, including moderation itself... If in doubt, just split the malt bill in two and do a double mash. Mash and collect, clean out and mash and collect again. Don’t even bother sparging – you don’t want any more water in there. Keep the fermentation a little warmer than usual 21 - 23°C, and don’t panic if it takes a month to ferment...

Notes: Inspired by a clone of Founders Kentucky Bourbon Stout. Infusion Mash at 65C for 60 mins. Add Hops, chocolate, and coffee as specified. Ferment for 2 weeks at 19C. Soak 14 grams French Oak chips in 0.2 L Kentucky Bourbon for 2 days. Soak ground coffee in 0.2 L boiled, cooled water and leave overnight, covered in refrigerator. Strain out grounds and add cold coffee and bourbon, with wood chips to secondary. Rack fermented stout into this mixture and condition in secondary at 19C for 2 more weeks. |

brewed last night. forgot to add the water agents smh. original recipe had me at 75% efficiency for 1050 OG, came out with 60% for 1040 smh. idk why i thought i would get 75, maybe because recently ive gotten higher efficiencies with double crushing the grain, but also this beer has a lot of flaked wheat and oats so i shouldve known it would be low.
Really if I had done my rule of thumb and left out the flaked stuff in the calculation i wouldve gotten to 75% on the rest of the grain bill.

revamping last years OFFSZN for rebrew as mommys bier 2.
* adding water profile and brewing salts. using shared ward labs profile for henrico county for september 2020.
* reducing nugget bittering addition from 0.5 for 60 to 0.4 for 45 to fall more in the middle of the accepted IBU range for this style
* reducing 2row from 4.5 to 4.5lb to account for good efficiency last time, knock the beer abv down from 5.89 to 5.3 (also more in the accepted range)
* added acidulated malt for mash pH
.....should i scale this up to 10 gallons though???? might not have space in the fermentation chamber....

Originally was supposed to hit 1049 on 5.5gal with 75%. Came out a little under vol, but 1055. Updated recipe as such.
I thought I was going to come out way under because of how light the wort was. And it's a small grain bill compared to recent recipes.

* swapped out yeast for wyeast.
* this is 5.5 gallons. since its even grain and hop values just leave it like that and aim for 5.5
* the spices are supposed to go in at flameout for only 5 mins in whirlpool - prob need to use a bag.
* recipe calls for 90 min boil but i dont think that is necessary. * ferment at 63 for 7 days then free rise to 73 for remainder.
