Per Jamil Z's book Brewing Great Beers, Use American for a drier / roastier version and an English for fruitier.
On this recipe I'm calculating at equipment setting of 1.5 gallons of dead space in keg. Seems 2 gallons as a figure also resulted in higher yield going into fermenter, I believe other figures were correct, so adjusting this. (once I though 3 gallons, I believe grain in keg effects my measurement.
original recipe was based on calculation at 70% efficiency.
Target OG: 1.064
Actual measurements: 1.046 pre boil grav.
Actual orig grav: 1.056 orig gravity
Actual final grav: 1.011
volume was just about on target with approx 5.5 gallons in fermenter. (its a bit hard to tell for sure).
If all else stays consistent that would put my final efficiency at 60% (research how to increase) |

Notes: Step by Step
Mash at 150 °F (66 °C) for 30 minutes, start lautering slowly. Collect 7.5 gallons (28 L) in the brew kettle and boil for 75 minutes adding hops as indicated. After knockout, cool the wort down to ~190 °F (88 °C) before adding the first coffee addition. Ferment at 63 °F (17 °C). After fermentation has slowed down you can add the cocoa nibs and bloomed cocoa powder directly to either the primary or secondary fermentation vessel. Let the beer sit for one more week. Using a sanitized growler, draw off a 1/2 gallon (~2 L) from the fermenter onto the second addition of coffee for a 24-hour cold extraction of the coffee beans. Place growler with beer and coffee beans in a refrigerator for 24 hours. Strain the beer back into fermenter and you’re ready for bottling/kegging. |

Notes: In a galaxy far, far away, this Imperial Red IPA pours a bright Red hue signifying the Imperial Army, and is hopped with Falconer's Flight and Galaxy signifying the Millennium Falcon. As soon as this beer is poured, battle ensues beginning with the aroma. The nose is instantly hit with sweet malt and honey notes but quickly overtaken by the tropical citrus, overipe fruit, and stonefruit notes from the hops. There's much of the same with in the taste when the malt and hops compete with enough force to destroy the Death Star!
Cheesiness aside, the combination of sweet malt and tropical citrus make for an amazing ride... in less than 12 parsecs! |
