Notes: I think I somehow nailed everything. My recipe was a Russian River Pale Ale clone recipe I found (http://www.homebrewtalk.com/showthread.php?t=369668). I gave up trying the exact recipe because I rounded up to the next pound the amount I needed and my LHBS mixed all the grains before I realized it.
dry hopped 5 days in. kegged 16 days after brewday. 12 psi to around 2.5 volumes. waiting 2 more days to enjoy |

Notes: Amarillo and Simcoe hops dominate the late additions. After one sip, it’s no wonder why breweries can’t get enough of these hops. Slight malt sweetness initiates the taste buds only to give way to a dominate citrus and pine finish. The floral, tropical aromas will invite you to drink this all evening long.
0.5 lbs Corn Sugar (10 min boil addition)

Notes: Recipe wont let me save the amount of the other ingredients.
Thinking 5 Lbs of roast pumpkin in the mash for 70.
Malts for the original brew had 6% of brown and 5% of Chocolate. This looked too dark.
For next time reduced these to 4.5% and 3.5% |

Got impatient and dumped entire brew kettle, including cold break and hop leaves that made it out of the bag into the fermenter. (Probably should have siphoned everything but it was quite late at this point.)
Placed fermenter in refrigerator at 58*F
2012/09/07 - Fermentation bubbling slowly
2012/09/09 - Fermentation barely bubbling, if at all
2012/09/18 - Fermentation has been done for a while I think. Should transfer it to keg soon.
2012/10/02 - Transferred to keg. FG 1.011. |

Grain to glass in 7 weeks. Competiton entries (first round) were 8 weeks old. Carbed to 2.7 volumes of CO2. We underpitched by about 20% as to stress the yeast a little for more ester production.
