Notes: This started as a basic Irish Stout kit from Midwest Supplies (Beer. Simply Beer.). The idea was to add some chocolate rye for a hint of spicy while imparting more color and roasty flavors. Addition of 1 lb of amber dme to boost abv a tad. All in all I wanted a strong flavored stout with some subtle pumpkin flavor that tasted a little like a big beer without actually being one.

My own gravity read was around 1.056. However this is a brand new hydrometer and also the first time I've taken gravity measurements (I'm really new to this) so I'm curious to see what my FG is. |

For biab; I find it easier to hit my og target by splitting my mash into 2 seperate tuns then combining them into the kettle.. You can go for all in 1 kettle but will usually result in lower og and is usually very messy. |

A single infusion mash will work just fine here. Look for a mash temperature at the upper range of the brewer’s window (154°F to 158°F). This will produce more non-fermentable sugars and create the beer’s rich, sweet profile.
A pitching temperature just below 55°F is common. Work hard at keeping your fermentation temperature below 62°F.This will create a clean, very low-ester profile, richly malt-forward beer, and keep fusel alcohols down.
Remember, yeast has to work harder in high gravity beers, so be sure to aerate/oxygenate the cooled wort well. Also, be sure to pitch enough healthy yeast by either making a starter (liquid yeast) or cast more than one packet of yeast (liquid/dry yeast). |
