Force Carbed at 25Psi and let it ride for duration of keg. May need to turn down serving pressure if you're sitting on some. Takes about 3-4 days to have the right carbonation.

Notes: Take 1,5 liters of boiling mash at 30th minutes of boiling and boil it for 50 mins in a pot. It will turn something like a püre sugar. Then add it back to boiling mash. This will improve the body and malt aroma of the beer.
After the end of first fermantation, boil just too little water that would help honey to be mixed good and add honey. Boil the mix for 10 mins, then cool it down to around fermantation degree. Then add it to fermanter. |

Notes: Walnuts combined with enough water to make 1 gallon total volume, then gently boiled for 38 minutes on the stove. Strained out the walnuts, dissolved honey, added 1 tsp DAP and 3/4 tsp Pectic Enzyme.
Pitched Cotes de Blanc red star yeast, but temperature was still a bit too high (100F) so may need to repitch tomorrow. |

Notes: I made a Belgian Strong Dark with the Ardennes yeast, and rack to a secondary and added the Brett Lambicus - just to see if it would result in a dark, tart cherry pie beer. On April 2, I sampled all my Bretts that I have going, and this one smelled of the Ardennes yeast (Belgiany/Abbey yeast) and was getting a little funk. Definitely warming alcohol, but I think it has 3 more months to go at least to get a proper level of funkness. See ya's in July! |

Notes: Brewed on 11/08/15.
Ambient temp at 61. Mash @ 152.8 & 151 after 30 mins. PH seems closer to ideal due to larger hot break chunks and lots more trub upon straining.
OG is 14 brix (1.0546). Slightly higher than anticipated.
11/16/15: Temp was at 64 in the fermenter - took it out to ambient and hope to start getting near 68 degrees for a proper D-Rest.
Yeast is still in suspension and still bubbling very slowly but consistently.
Gravity measurement gave me 6.15 brix (about 1.0099 gravity) APPARENT ATTENUATION 81% - this puts it at 5.7%!!! This yeast attenuates like crazy!
Taste wise it's going to be an awesome beer!
11/22/15: dry hopped in the bucket with 1.5oz. I'm having trouble raising the beer temp to 68 for a D rest, but it's been up to 66 for 3 days. Kegging in 4 days.
11/27/15: kegged. 6.7 brix FG (1.011) @ 5.5% alcohol. 79% apparent attenuation. |

Notes: The second Black malt addition was a steep. After mashing I didn't think the sweet wort had enough of the black malt profile. The steeping helped. Next time I'll just use the full 12 oz in the mash.
Reserved 2.5 gallons at keg time to a carboy for further conditioning to observe if it helps the flavor. Will also add the spices back in before bottling this reserve to see how that contributes. (added 1/8 teaspoon of nutmeg and cinnamon to bottles) |
