Notes: UPDATE, 4/16/2019:
Paddy was a massive crowd pleaser at several family events, with beer drinkers begging for more, and even non-beer drinkers quite pleased. Very drinkable; folks loved the Irish Red that finished with a citrus kiss!
The goal of this beer was to start off with a dry Irish Red Ale malt bill, but then finish it off a big burst of tropical flavors, like Paddy himself when he retired to Florida. The bittering hops are British Isles in nature, earthy and floral, but then Yakima Citra is brought in for aroma, and the infamous Amarillo dry hop for more fruity fun. To accentuate the pineapple and other tropical tones, Trappist High Gravity yeast is brought in for a big bite of Belgian oranges, and again, the other goal was quite a dry beer; Trappist attenuation, combined with an alpha-amylase saccharification will hopefully do the trick. Color was supposed to be Ruby Red, but appears to be orangeish-red in the glass, with the foam breaking into a glorious burnt orange; a Bob Ross Happy Accident. As for style, well... what's more American than Irish malt, Belgian yeast, and West Coast hops going to Disney World, hence, an American Amber Ale. |

Notes: Used WLP590 French Saison yeast.
Add 8 oz of basil simple syrup at flame-out.
Basil Simple Syrup
1. Chiffonade the Basil.
2. Dissolve Belgian Candy Sugar in to 1 cup of water at medium temp stirring often.
3. Bring mixture to a boil.
4. Remove from heat and add basil.
5. Let mixture stand for 2 hours.
6. Strain the basil out of the mixture
Yield: ~12oz of syrup
Ferment at ~68 degrees F for 7 days
Rack to secondary and add .5oz kent goldings
Allow secondary to clear for 7 days. |

Notes: FG taken at bottling was 1.005 (calibated for warm temp of 23.5, ambient temp 30 at least.). Attentuation of 89% according to the abv calculator. Much higher than expected. Don't know why, ferm temps were constant for 16 days. Perhaps too much yeast, so slight over-attenuation.
Bottled via secondary with a racking cane.
At two weeks (conditioning) hops are still quite forward. Colour is not as much red, as brown. Taste is clean with some malt complexity, some bread. Not much in the way of esters, which I think is in keeping with the style.
Improvements for next time. Fuggles hops, caraamber and/or carared, perhaps lose the chocolate malt. The pilsner and pale ale malt worked well in keeping it quite a clean and light tasting. Keep Nottingham yeast. |

Notes: This is my best guess at LeftHand's sawtooth (an ESB). Per the brewer:
The grist bill consists of 17% crystal malt (15L, 40L and 75L- use twice as much 15L and 40L as 75L),
7.5% Munich malt (10L),
we add a smattering of malted wheat (2%) for head retention and an even smaller smattering of black malt for color (WELL below 1%).
Hops used are Magnum for bittering and Golding and Fuggles for flavor. Cascade is used as a finishing hop.
Mash in at 67C.
It will be difficult to reproduce this beer because we use a proprietary strain of yeast that is not available anywhere.
Its parentage is California Ale yeast but it is very different at this point. Ferment at 20C. |
