                | Notes: Varm opp til vannet har nådd 71 grader, ha oppi posen og deretter maltet(kornet). Pass på at den ikke klumper seg. Da vil temperaturen falle til ca. 66 grader. La stå i en time. Prøv å holde temperaturen jevn med å isolere med f.eks. ei dyne. Når det har gått 60 minutter snørper du sammen posen og lar den renne av seg over kjelen. Sett gjerne ei rist i mellom. Skyll over med skyllevannet.
 Sett så varmen på fullt og vent til det starter å koke. Kan fort ta opp til 45 minutter før det starter å koke, kommer an på effekten. Ha oppi humle når det begynner å koke. Følg oppskriften.
 Når det har kokt i 45 minutter har du oppi vørterekjøleren (15 før kokeslutt).
 Når det har kokt i 60 minutter skrur du av varmen. Kjøl så ned vørteren og før det over til et godt vasket og desinfisert gjæringskar- husk å desinfisere slangen.
 Ha oppi gjæra (bare strø den forsiktig over toppen) og risk karet godt i 5 minutter for å få inn oksygen. (Dette er viktig).
 Lå stå i to uker, for så å flaske ølet med 6 gram sukker per liter øl. Blandes ut som en sukkerlake i omstikkingskaret. La flaskene stå romtemp i to uker for karbonering før de kjøles og serveres. Nyt! :-)

 Tasting Notes: A huge hit with the BMC crowd! Nice white head, clear and crisp but with flavor.
 
 7 lbs Vienna Malt (3.5 SRM) Grain 70.00 %
 3 lbs Pilsner (2 Row) UK (1.0 SRM) Grain 30.00 %
 0.50 oz Pearle [8.40 %] (60 min) Hops 14.4 IBU

 Mash at 150 degrees for 60-75 minutes. Sparge to get boil volume. Boil for 60 minutes, and rapidly chill to 62 degrees. Add yeast, and ferment at 62 for 14 days. Rack into secondary, or keg, and crash cool until clear.
 
 This beer was not originally mine- I found it somewhere here, but can't find the thread of who posted it. Will the real recipe-czar please confess? I made a few changes, to match my supplies, but other yeast strains can be used. German Ale yeast, at a cool ale temperature, would be wonderful. This beer tastes like a more flavorfull BMC.
 
 Due to my long and low temp mash, it finished at 1.008, lower than my goal of about 1.010-1.012. I thought it might be too dry, but it actually turned out perfect!

                | Notes: Drinking this now (3/30/14). Although there is a definite malt presence and pronounced hop bitterness in the beer, it is not balanced. My hope is that it will mellow with a little time. But that's been my hope with a brown ale that seems to be a little too sweet and it has not improved with a considerable amount of time. This was my last brew before receiving a Ward Labs report. I made significant alterations to my brewing water - primarily by blending it with 60% RO water - and am very interested to see how it affects the next beer. It is my Mystic Mama clone attempt split into two different fermenters with two different yeasts. 4/14/14 - dumped this beer due to infection. Also dumped the brown ale just because I was tired of trying to enjoy it.

 For AG, I find that I like this recipe best:
 
 10 pounds maris otter
 1 pound Cara-Munich
 1 pound Munich
 1/2 pound crystal 40L
 
 Mash at 156-158 for 45 minutes or until conversion. Sparge to get up to boil volume.
 
 Hops:
 1 ounce Perle 60 minutes
 .25 ounce perle 30 minutes
 .25 ounce perle 5 minutes
 .25 ounce saaz 5 minutes
 
 Shoot for an IBU range of 30-35. My perle hops have been all over the map as far as AAUs go- I have some that are 9.3% and some that are 6.9%, so you may need to adjust these amounts.
