Subbed Melanoidin for Honey Malt (no honey malt on hand) 1:1
Blueberry added as juice, 3qts reduced over stovetop. Equivalent weight of raw fruit was extrapolated from sugar content. Juice is added directly to the fermentor with the chilled wort prior to yeast pitch. It was left in the Fermentables so that its sugar content is calculated in OG/FG numbers. Due to this, Mash pH calculation is off in the header description.
Mash pH is 5.41 with salts, acid, and grains.

Notes: Done in a 5 gallon pot.
Heat water to 165 degrees. Add grains and mash at 150 degrees for 60 mins. Strain and top off with 4 cups of water. Ferment 10 days.
Use fresh peaches. Cut up and put in a 1 gallon freezer bag. Freeze and thaw 3-4 times before pureeing. Put vanilla bean in vodka solution for 24 hours before racking. Rack beer from primary onto peaches and vanilla. Let beer sit on peaches and vanilla for 7 days.

Notes: This has been my go to ale recipe for years. It is light, flavorful, and loved by everyone who pulls a pint. You could dry it out a bit by adding a pound of suar or maze in the boil, but it stands well on its own.I brew it at least once a month. I never shared it until now as a friend of mine entered it into a local comp and won 1st overall.
Add a little gypsum to get mash ph to 5.5
let it ferment for 14 days and keg to 3vol. |

Notes: Got 6 jars of Eden's for FREE. 20 oz each. Slightly thinner than extract - like molasses - so dissolve and get a preboil OG to know hopping rate with goal of 35 IBU. Then see what I get.
Boiling 7 G water at OG yielding aprox. 5% beer. Boiled 90 minutes.
Preboil OG of 7 gallons was 1.038. 6 gallons into primary fermentation. Estimated to be 4.5% beer because syrup was slightly thinner than extract.
Color of a porter. 1st rack planned to be at 7 days. Fermented in 3 days! Gravity will be recorded then. |
