(Zest Lemons, Measure out Lavender and Hops)
Bring water to a boil.
60 min - Add half of DME
30 min - Add half of DME
15 min - Add 1 oz Mosaic
1 oz Citra
.5 oz Amarillo
10 min - Steep 10 g Dried Lavender
Lemon Zest from 3 Lemons (No pith)
1 min - Add 1 oz Mosaic
1 oz Citra
Use Wort Chiller to get temp < 90.
Add to Fermentor and Strain
Add Yeast

I wasn't picking up any lavender when I was emptying the sediment after about 2 weeks, so I boiled some additional Lavender and added it in. I'm a big lavender fan, so I really liked it. If you want more of a subtle flavor, I'd stick with just the measurement used in the recipe. Didn't pick up much lemon flavor, probably because the hops were pretty intense. Overall I was pretty happy with the brew. |

Notes: Steeped grains for 20 minutes before boil.
Made a yeast starter.
Primary temp fluctuated between 17C and 21C. Maybe down to 16C - winter temps. Fermentation not visible until 48 hours.
Primary for 12 days, not sealed. Opened maybe 6 times total to check fermentation.
Transferred to secondary with racking cane. First time unsuccessful, so I had to refill siphon with sanitizer and do it again.
Bung was still wet when attempted to put on. Pressed it too hard and it entered carboy. Temporarily covered with unsanitized aluminum foil for 24 hours.
Boiled 300ml of water and added 1/2 cup corn sugar (dextrose). Worried about 1 gallon of headspace in secondary. Added dextrose and installed bung and airlock. Filled airlock with vodka.
Bottled on 02/19/2014.
Update: 07/22/2014. Forgot to take tasting notes :(. But I remember it being really good despite my conceived screw-ups. |

Notes: This is a very simple cider with few additives to let the apple flavor shine through. With proper aging, it produces a dry, fruity cider.
- Add 1g/L Malic acid to lower pH by .1 as needed to reach 3.7 pH.
- Check pH and add potassium metabisulfite as needed for a partial kill (for more information see chart: www.cider.org.uk/sulphite.html).
- Stock solution SO2: dissolve 3 grams of potassium metabisulphite in 30 ml (also grams) of water which corresponds to 50 ppm of SO2 for a six gallon batch
- Wait 24 to 48 hours before adding pectic enzyme and pitching rehydrated yeast.
- Primary fermentation: 4-6 weeks @ 55°
- Add 5 crushed campden tablets dissolved in a bit of cider to carboy /keg before transferring for secondary/conditioning.
- Secondary: 8 weeks or until clear @ 60°- 65° (cellar temps)
- Keg condition: 6 months @ 60°- 65° (cellar temps) in pressurized keg

~Stir mash @ 5 min. Temp/pH @ 15 min. Will calculate strike to hit 154*F so after stirring (well) will settle around 153*F.
~Slow down. ...Valve positions.

~Dry yeast version here. Use 2 packs and rehydrate.

Notes: I made this a few weeks ago and am about to bottle. It tastes great so far, but will definitely benefit from carbonation. It ended up being a darker brown color and you can taste the elderberry flavor, but it's not overpowering.
The OG ended up being 1.070, and the FG 1.012 -- likely from the sugars in the dried elderberries. (I used a package of dried elderberries from Brewer's Best).
I'd recommend using a bag, basket, or strainer of some sort to hold the elderberries, then pull them out before transferring out of the brew pot. Elderberries kept getting caught in the siphon during my transfer. |

2)500g of LDM and chinook boil for 30 mins.
3)Bring wort off heat and steep 25g of nelsons for 30mins.
4)Add remanining 1.5 kg of LME FV and then add wort.
5)Add cool water to wort to 23 litres to make temp of around 21 to 22 C and pitch yeast allow to cool to 18 c over 24 hours.
Dry hop remanining 25g Nelsons after foam crash around day 3/4 and bottle when steady FG reading after 2 days the same. |
