0.5 oz 0 minutes
1.0 oz dry hop
Set boil size to 3 gallons. For a 3 gallon boil, use 2 lb LME wheat for boil, in addition to steeping grains, to achieve 35 IBU for Gumbalhead. Add remaining LME after boil to keep SRM in 3-6 range. |

Chilled to 64ºF and left uncovered on stovetop for one hour before transferring to carboy and waited 3 hours before pitching 75mL of Crimson King yeast cake plus one vial of WLP655. Vigorous fermentation ~36 hours later. Holding steady at 68ºF.
9/15/15: Added dregs from Lost Rhino Exesus Sanctum.
10/4/15: Added dregs from Hanssens Oude Gueuze (Nov. 2014)

Notes: Add raw vanilla beans during fermentation. I do 2 beans, cut them open and drop them in the fermentation. Do not use extract. I let it sit for a week and then added more after tasting. Let another bean sit in for 2 days and then racked to secondary.
Add 0.5 cups of bourbon when kegging. I used Makers Mark but I'm sure others would be good too. |
