Notes: Goal is to make a wheat ale with moderate fruit aroma and taste, not just background flavor. Decided on wheat and sweet extracts to entice family members who are not too fond of beer. Planning on splitting the batch in half, and making 3 gal a tropical fruit, and the other 2 gal leaving as a plain wheat beer.

Notes: DO NOT add sugar! - this was only used to calculate the SG of the watermelon juice
- start with running fresh cut watermelon through a juicer until 3 gal. is reached/ take specific gravity reading on juice.
(add sugar to the "recipe calculator" until the SG matches that of your juice then determine how much malt you will need to reach starting gravity 1.067)
... pour into your boil kettle and bring to steeping temp. / step grain/ add malt and bring to boil/ add hops in turn / cool/ and pitch yeast... |

Notes: Pale ale is the Briess 2-Row Pale Ale. (difficult to find)
Can't call this beer a true American Strong Ale. It is a hybrid using a DIPA grain/extract bill and swapping the HOPS to a Hallertau (a German Noble Hop) and cutting the amount considerably. I am not a hop head.
3 weeks primary (temp 68 degrees)
4 weeks secondary (temp 64 degrees)
3 weeks bottle (took extra time to carbonate since most of the fermentables are gone by this time)
Ages incredibly well!
Qualities: Very smooth, round and soft mouth feel, not thick, lightly carbonated. Fairly sweet. Doesn't have a boozy smell, but there is a definite alcohol character to it in the nose when you drink. Similar to a good bourbon ale.
Update: This one really needs to age! I bottle aged 12 of these for 8 months and it is night and day different. |
