Notes: Liquid Yeast: White Labs San Francisco Lager
Description:- An easy drinking lager with a fuller flavour than our neighbours below. A small addition of crystal malt balanced with northern brewer hops give this brew a dark golden colour and balanced finish.
Yeast:
Dry Yeast: Saf-Lager W-34/70

(2017-03-18 10pm)
Put LDME in hot water bath
Bring 2.5 gallons water to 65C (overshot, added half a gallon t bring down)
Add steeping grains to sock and put in water, 20 minutes at <76C
Remove bag,(did ghetto sparge), (burnt hand on lid) , bring to boil
Remove from heat
Add LME stir through
Bring wort to boil
Add 2oz cluster @60
Add half whirlfloc tab @15
Add 1oz cascade @1
Flame out
Add DME and stir through
Add water to batch to bring below 90C -- isomerisation exponential drop off from 100 to 79
Siphon hot wort to cube (went way better than expected)
Top cube up with water to 5G
(temp in cube was now 50C, less than pasteurisation, so commenced chilling in bathtub (in sealed cube))
(gave up on chilling, chilling sucks, stuck cube outside till tomorrow)
Seal cube
Aerate wort and pitch yeast @ 17C (like 3 shakes and pitched @17.8c, 2017-03-19 12pm)
(put in ferm fridge but all controls off. glad wrap for lid)
Leave cube to ferment @17c (maybe blow off tube)
(2017-03-20 9AM 17.7C 1" krausen)
When activity ceases raise temp to 21C
When FG stable crash to as cold as we can get (prob not very cold)
Add gelatin (1/2tsp dissolved in 1/4 cup water)
Rack into bottling bucket with priming soln

Notes: Souring Process-
1. Bring 2 gallons of spring water and dry malt up to 130 degrees and hold.
2. Dump mash into clean sanitized 5 gallon bucket
3. And in crushed Acidulated Malt and stir
4. Cover with foil the best you can to block air
5. Attach lid and wrap up in blankets on all sides to trap in heat while it sours.
6. Let sit for 15 to 24 hours to sour.
7. Open bucket remove foil and skim off any surface mold.
8. Smells like hell but it's suppose to!
9. Strain out all grains while adding mash to brew pot, add more water, and bring mash up to 155 degrees and add any specialty grains, or bring to a boil and finish recipe as directed. |

Notes: (Notes from my Original Recipe, man has my knowledge grown since this first batch!)
I like to add the Lactose in the last 15 minutes of the boil. I've switched from adding the Vanilla to the boil to adding it into the primary Fermenter, in English, I retain a lot of the taste of Vanilla that from when I was adding to the boil. This should have a decent balance. |

Notes: Steep to convert the grains at 150 degrees for 45 minutes in 5 qts of water.
- for every 2 lbs of grain, use 1 gallon of water. 12oz + 12oz + 6oz + 6oz (2.25 lbs) = 5 qts.
Sparge with 1/2 gallon water (150 degrees)
Add enough water to bring wort volume to 2.5 gallons
Add late addition fermentables (Wheat DME and Candi Syrup) at 45 minutes into 60 minute boil time (ie, 15 minutes) |
