Messed up temp at mash and went way high - contributed to higher OG - but it didn't matter. Racked into a keg and set at 30 psi for two days then dropped to 12 psi and served after more days. This was an AMAZING beer. Was gone at a small party in less than 90 minutes. Just refreshing, crisp with some good banana and clove.

Took out around 3 litres of water at 65c - used this for steeping the aromatic grains - for 30 minutes - brew in a bag On rolling boil - added 2 Kg of DME + Solution of brew in a bag - extracted solution Wait for reaching rolling boil again and then started one hour counter 1) Added 28 gm - Brewers gold - @ 45 min remaining 2) Added 12 gm - cascade - @ 15 min remaining 3) Added half whirlock tab with 5 min remaining Prepared sink with ice and water. Placed vessel into the sink, Tried cooling. Took more than 30 min to cool down. Syphoned the wort into the ferementer @ around 45 degree - could not wait longer - hoping the syphoning will reduce the temperatures quicker. Pitched the yeast in Gave it a good shake, bottled up and placed air lock Placed in a bucket of water for maintaining ambient temperatures. Keep replenishing ice when ever possible Possibly getting around 22 to 25 ambient average temperatures.

This was the first beer I had ever brewed, it was not a great one but drinkable and at around 10% abv in my 16 oz flip top bottles, it was sure to give ya a buzz and a bitter beer face. I went in full gusto, high guns a blazing, lol. Over hopping, over ABV, the whole 9 yards. I bottle conditioned but because of the room temperature and the high abv, I naturally stressed my ale yeast. Some got carbonation and some didn't. If I had to do this one over and I will, there are going to be a whole lot of changes. I boiled out 2 gallons of wort in my 6 gallon boil and I should have replaced it with filtered water to make up the 5 gallon mark. This was also before I had learned to use a brewing calculator.
